    I thought using a sugar substitute would be less than the amount of sugar ?

    The substitute's packaging should tell you the equivalent amount. They aren't necessarily all the same, but many are the same measure for measure.

    My Favorite Oil and Vinegar Dressing

    Splenda is cup for cup substitute, according to the package. Things like Equal or Sweet and Low are not. Use whatever amount your substitute says is the equivalent to 2/3 cup sugar or whatever amount gives you the sweetness that you want.

    Bulk Splenda and bulk Equal are bulked out with flavorless carbohydrates to make the volume/sweetness ratio the same as sugar.
