We go to my SIL's for T-Day. She is AT best a haphazard cook. I always offer to bring something. This year she asked me to bring vegetables because she doesn't eat them.
The mash potatoes, stuffing and candied sweets are covered.
Brussels are out ( no one likes but me and DH )
Mashed Butternut is too similar to sweet potatoes
I am doing my Mom's baked corn ( I know ANOTHER starch )
so I desperately need something fresh and green,
Everyone think a salad would be weird ( I do not )
So I am looking at Green beans or Broccoli. I need something different , not too cheesy or rich.
I am hopeless with the sifter .... any ideas ?

How about picking up some broccoli slaw mix? Or have some lightly cooked sugar snap peas?
If you wanted to be sneaky, you can make a slaw with shaved raw Brussels sprouts, but it's probably more work than you'd like to have.

Asian Creamy Green Bean Casserole
Ingredients:
2 pkg (10 oz ea) frozen green beans
1 (8 oz) can Chun King Water Chestnuts, sliced
1 (4 oz) can mushrooms
milk to make 2 cups total liquid, see directions
1/4 cup Mazola Corn Oil
2 tbsp Argo Corn Starch
1 tsp salt, and dash pepper
1/2 (3 oz) can Chun King Chow Mein Noodles
2 Tbsp grated Parmesan cheese
Directions:
Cook 2 pkg frozen green beans.
Drain, mix liquid with liquid from 1 (8 oz) can Chun
King Water Chestnuts sliced, 1 (4 oz) can mushrooms,
and milk to make 2 cups total liquid.
Mix 1/4 cup Mazola Corn Oil and 2 Tbsp Argo
Corn Starch, 1 tsp salt, and dash pepper in saucepan.
Slowly stir in combined liquids; cook and stir
over low heat until thick.
Remove from heat, stir in drained vegetables.
Layer in casserole with 1/2 can (3 oz) Chun King Chow
Mein Noodles. Top with rest of noodles and 2 tbsp
grated Parmesan cheese.
Bake for 20 min at 375 F.
Makes 8 servings.

Here are two ideas.
You could do a tray of crudites and dip or a fruit and veggie tray. These both go over big with kids and adults with dietary concerns.
Another is to trim and blanch a bunch of green beans for 1-2 minutes. Then plunge them in ice water to halt cooking. (You can do this the day before) While the turkey rests, heat the oven to 400 degrees and toss the beans with a little olive or grape-seed oil - both have high smoking points - and spread them on a shallow pan. Sprinkle with salt. Roast them 8 - 10 minutes. You want them to have some blackened spots. Put them in a serving dish and drizzle with a mixture of light soy sauce and balsamic vinegar.
I think I make my soy and vinegar with a 2 tsp soy to 3 tsp vinegar ratio. If you make it up ahead of time you can taste it and adjust for your family's tastes. If it's too sharp for your tastes add a pinch of sugar or a few drops of honey.[/b]

The green bean bundles wrapped in bacon are always good and easy.
I do like broccoli with a light mustard vinaigrette, because it can be warm or room temperature.
I'm not a fan of salads with turkey day; but some people are.
My Mom's and my favorite peas and pearl onions in either a butter or cream sauce. It was a classic at our house.
Roasted green beans with a simple balsamic and butter drizzle is really delicious and easy.
I'm not really fond of casseroles because you have so many rich foods.
If you like a salad; spinach with dried cranberries, apples, pears, and a nice pomegranate vinaigrette is really festive, topped with candied pecans. It is easy, and green

Green Beans and Shallots
You can cheat & steam the green beans in the microwave then to a skillet with EVOO add the shallots. I make the shallots the day before. and toss the dish together in minutes.
