    love this recipe, can I use this in an electric roaster? Also I have read where if you do not lift the top through cooking process with the roaster, it will be moist, and does not need basting like a regular oven.

    Any feed back on this?

    Yes, you can make this in the electric roaster.
    I would not worry about opening the lid for basting. The issue with that is that the temperature will drop some, but it will come back up. Just keep that part to a minimum.

    My roaster has a vent to let some of the moisture out. You can always add more liquid if you like. Too much moisture steams it (think crock pot) rather than roasts like an oven.
