I am planning on making this for Thanksgiving;
http://crockpot365.blogspot.com/2008/02/roasted-vegetables-in-crockpot.html
She mentioned that 4 hrs is critical. So then I had to find this one;
http://www.sixsistersstuff.com/2012/07/slow-cooker-roasted-vegetables.html
which mentions 5-7 hrs. So now I'm kind of lost. Other than opening the crockpot every 1/2 hr to check for doneness, who do I believe?

Cooking times in slow cooker recipes are all over the map for a variety of reasons (degree of doneness, variability in how hot the cooker runs, tendency to over-cook, and on and on).
I would fill my cooker 1/2 to 2/3 full and cook for 5 hours. I'd check and give it another hour if necessary. 30 minutes in a crock pot - well things don't change much.
