Hello my favorite menu people!!!! It's a gorgeous day here is So Cali! Cloudy with small chance of rain. LOVE IT! Sitting here sipping my coffee and putting finishing touches on my menu for the week.
It sure is nice having all of my sons home for a while! But my food bill triples! (One extra son, means 3 extra mouths to feed as his best friends are always here for dinner!) But I really love having all the boy/menfolk around. Sheesh! They're not boys any more as of next Saturday. My youngest turns 18!! I'm old.
Anywho, here's my menu for this week. Share yours!!!
Saturday - going to my brother's birthday party. So no cooking.
Sunday - Tomatillo Posole with cornbread and salad
Monday - Maybe a fish fry to get rid of all the fish in the freezer from this past few months of fishing trips. With potatoes and vegies.
Tuesday - Kelly's Kitchen Sink Goulash! with crusty bread
Wednesday - Kentucky Fried Chicken Honey BBQ Chicken Strips with corn and potatoes
Thursday - Spinach-Artichoke Cheesy Tortellini with salad
Friday - stretch room!

Saturday: Low-Fat BBQ Sandwiches. on sandwich rolls, chips and salad
Sunday: Chicken N Rice Casserole Bake w/carrots
Monday: Sauteed Fish With Thai Coriander-Chili Sauce w/some kind of veggie
Tuesday: out with friends
Wednesday: Crock Pot Chicken Barbecue w/ salad
Thursday: Baked Ziti (Ww)
Friday: Salmon With Ginger & Green Onions w/salad

I love that Chicken N Rice Casserole Bake - I've been making something similar for years. But it's been forever since I've made it! We always called it No Peek Chicken.

Afternoon All!
Charmie, enjoy the company; you will miss them when they go. Love the tomato pissoli and the fish fry idea. I could eat a fish night, almost every night. Me. Just been busy; I cook for Lady #4 on Sunday night and deliver Mon, so that keeps Sun night tied up; and then work has been busy too. Been busy working on stained glass as Christmas presents and with my garden; so not much free time. Trying to use up lots of stuff and save some $$ for Christmas
I have links for a few recipes, but lost them. Sorry, I'm not going to look them all up again.

Mini beef beer burgers; french onion soup w/melted gruyere; warm german potato salad (looking for the right spud recipe)

Soup Day: None / Bread Day: Sourdough (box mix to use up)
Lady #4:
- Turkey tetrazzini; broccoli cranberry salad
- Stuffed baked chicken breasts w/pesto, goat cheese and a pine nut coating; brown rice with Italian seasoning; classic caesar
- Stuffed cabbage rolls; feta olive toasts
Me: Steak, great sale 4.59 for a nice strip steak (no recipe, just s/p, grill seasoning) served with my own steak sauce; grilled balsamic portabellos; grilled green beans with garlic

Lady #1 and #2: Turkey tetrazzini; broccoli cranberry salad
Me: Work, so taking either one of my pizzas or burritos from the freezer, or leftovers

TUES ...
Salmon, grilled with an Asian flavor (deciding on the recipe); cabbage salad with a peanut dressing; homemade roll

WED ...
Lady #1 and #2: Out to a fundraiser
Me: Pesto pasta; Italian chicken kabobs w/tomatoes, onions, peppers

THURS ...
Lady #3: Have to check on her dietary needs; but thinking chicken and dumpling soup (low salt), TBD; fresh fruit
Me: Out

FRI ...
Lady #1 and #2: Card/Game Night - TBD (thinking crab and fish cakes, coleslaw; fried spuds, corn, etc.)
Invited to a restaurant opening. Not sure if I am going; if not, I will grab something when I'm out during the day, maybe some sushi or just cheese, salami and crackers
Things could easily get changed around this week; but that is the plan .

we make this one a lot but I change it by using chicken broth instead of soup and carrots instead of celery so it's a whole meal and little work.

Today's lunch...Hamburger with the lot for hubby
Sliced hamburger patty for me, lettuce tomato, sprouts and added some Southwest dressing with balsamic and cracked pepper
Here in Australia you can get hamburger with the lot
it is layered usually in a bread bun
Lettuce, tomato sauce (ketchup) cheese (this one had none as DH limits), beetroot, topped with a fried egg....
I tried to get some of the layering
this is what I ended up with

Stuffed Mediterranean Mushrooms
ricotta, kalamata olives, sun dried tomatoes, oregano, parsley, parm-reggiano cheese etc
Difficult to photograph, but tastes very yum too!

Hey gang. Had a challenging day yesterday--storms, power out for several hours due to fallen tree. Can't imagine what the east coasters are going through
All is right today and I am off work--kids are in school. Happy Veteran's Day.
High School football is over--moving on the basketball, but no games this week--here is the plan:
Monday: A Chicken in Every Pot Pie and salad
Tuesday: Fabulous Beef Stew, corn muffins, and salad
Wednesday: Granny's Dirty Rice, steamed green beans, baked sweet potatoes, and salad
Thursday: Smothered Beef and Onions, steamed broccoli, salad, and Caramel Pear Pie
Friday: Eat Out, and after-- Gingerbread Men (The Drink). Stay up with the kids--they are having friends over
Work Lunches: Chicken Lettuce Cups (Martin Yan) and North African Cauliflower Soup w/ crusty rolls
Breakfast: Crunchy French Toast
Snacks: Boiled Raw Peanuts and Pumpkin Brownies

That goulash looks like something my mom used to make--yum. Enjoy your boys
