    I like this one, the Spanish chorizo adds a lot to the flavor. Make sure you don't use the Mexican style, which is raw and has vinegar in it. Spanish chorizo is a dry sausage you can find at good deli counters. I use Boar's Head.
    Double it for a four-quart cooker.
