I am looking for something similar to Chicken Divan without using dairy or soup or broth. I am not an experienced or creative cook and think there may be something very simple. For personal reasons, I am extremely health conscious and keep things simple-eat lots of fruits, vegetables and nuts, no dairy. Because broccoli is a "superfood" I want to incorporate this into my meals. Also, would like to incorporate beans into my meals.
    I appreciate your input.

Here is this interesting info about beans:

A 1-cup serving of boiled black or pinto beans provides 3.6 mg of iron. A 1 cup serving of boiled navy or lima beans provides 4.5 mg of iron, and a 1 cup serving of boiled kidney beans provides 5.2 mg of iron.
Other legumes also provide good iron sources. A 1 cup serving of boiled black-eyed peas provides 1.8 mg of iron and a 1 cup serving of boiled lentils provides 6.6 mg of iron.

And for the meals with beans that you want to incorporate into your diet, here are these good and simple recipes for you to check them out:

I'd make a cream sauce using nut milk-- pecans, cashews, almonds, or macadamias. Google "vegan cream sauce" for starters.
