Good morning all! It is a rainy Tuesday and election day in the US. I completed my last 2 recipes for PAC and wanted to share.
Rice Pudding (For One), #337291 by Spgty21 is made with brown rice. I used low fat milk and 1 tablespoon honey for 2 servings. It made a delicious quick dessert.
Rosemary Parmesan Polenta, #468594 by Julie.25 Made a delicious bed for my Cajun Shrimp and sauteed Peas. The recipe called for cream and butter. I made it healtheir by using low fat milk with a higher ratio of chicken stock. The olive oil was reduced to just enough to coast the pan.

Paula, this looks incredible! I have to try that polenta, being the polenta lover I am
Thanks for sharing, this looks too inviting!

Hi dear Mia!
Sometimes I prepare a "Chääsweihe" (not Chääsküechli, but the difference is only the size) using puff pastry or a simple savory crust and in the cheese mix I mix eggs, milk, nutmeg, pepper and "Martini bianco"!
A friend of me (and Italian gave me this tip of the Martini Bianco), on the crust place a thin layer of "prosciutto crudo".
In my case I skip the prosciutto crudo, but Martini bianco is a great tip, a genial one. She did not add flour to the mix, simply not too much milk.
This lady leaned me A LOT about cooking, I went in the forest with her looking for mushrooms, she introduced me to the South Italian and Mediterranean cuisine.
Back to the Chääsweihe, I have no recipe, I prepare this but I never mesure it,
perhaps you are right, I should prepare this once mesuring the ingredients, prepare this other times and find out the best quantities.
At the moment I can only give you the simple tip: Maritini Bianco !
Awalde
Martini Bianco never would have occured to me! I'd have used white wine, but I can see the point. Splendid idea.
I have gluten free puff pastry and will just mix something together. Which cheese do you usually use? Gruyère or Emmentaler?

Hi Mia,
I'm a Gruyere friend (I think like you!), I like Emmental is too sweet and to cheewy compared to Gruyere. The Swiss "Winzer" is even better!

I'm a total Gruyère fan - can't eat it, but can make it for DH with it and find some sheep or goat's equal. We have an organic food store that carries a huge variety of sheep and goat's cheeses, many of which are quite comparable to cow's cheeses.
I'm off now to bed (no night owl here )
Have a nice evening or afternoon (the latter one for Paula and Andi)

Always so good to see you
Awalde, thanks for this tutorial, how lovely! I bookmarked it right away.
Tomorrow I'm going to make Lentil soup, not a recipe that is posted here but my own concoction. Very typical fall recipe, and very healthy as I use home made beef broth, lots of vegetables and dried lentils. So yummy

Hi Mia, this sounds wonderful, you should post it, as many of us would scarf it down faster then a flea in a mid-winter snowstorm.

I've made Easy Bisquick Chicken Pot Pie 100215 by EA.
I used heart smart bisquick, 2% milk, low sodium soup, and cleaned out the random bits of frozen veggies on hand. I served with a green salad & melon. It was easy fall comfort food.

I also made Indian Satay Vegetables...made With Applesauce! (Vegetarian Too! #124062 by mickeydownunder for PAC. It made a ton of sauce, far more than 4 servings so the calories count should actually be less than listed. I've used a few TBS to 1/2 cup at a time to make several dishes for lunches this week. Yum!

Susie, this looks so delish! I now wish I hadn't already planned dinner, or else I would be whipping this right up now! The recipe sounds so comforting, I almost want to curl up on the couch...but alas, the cattle and horses call for their evening meal. So dreams of this will have to wait another day!
That Satay sounds unusual and equally enticing! I would love to try this, and probably would enjoy the extra sauce too!
Will get you marked down!
