    Hello menu friends!! It's a gorgeous Fall evening here. Weather has been all over the place - blistering hot and nice cool. Maybe some rain in the near future. I certainly hope so.
    I've made everything on the menu from last week. Doesn't happen that often, but it did this time!
    My eldest DS gets back late Monday from his first season as a pro player. He'll be home most of the time from now until Spring training. So excited as he hasn't lived at home since he was 17 and went away to college.
    My DH finally got a job, but it's at a drastically reduced wage. But the word came down today that in January work is going to be gang busters!!
    So this week's menu will still be low budget, but still tasty I hope!!!

    Here's my menu, share yours!!

    Saturday - doing a seminar all day, so not sure I will have time to cook. We'll see

    Sunday - Italian Burgers With Fresh Basil with potatoes

    Monday - Sarasota's Spicy Savory White Bean Chili - gonna try this SC!! with some cornbread and salad

    Tuesday - Sweet N Spicy Bacon Chicken with green beans and mashed potatoes

    Wednesday - Garlic Spaghetti Sauce with salad and bread

    Thursday - Peppercorn Salisbury Steak Deluxe with mashed potatoes and corn

    Friday - open for stretch room.

    Evening C - Late here, but can't sleep. I see Mickey got you started early this time. I understand the weather - hot for the most part, but we are getting a little Fall, low 80's and 60's at night. That is FL Fall.

    Great news about your son; it must be nice to have him home; and kudos to DH. Sounds like a good week.
    Me, bad back and ankle, but both healing. Ankle is fine, back ... just time, and nothing serious.

    I decided that this week will be to clean out the pantry and freezer to make room for Holiday stuff. So, other than picking up a few greens, tomatoes, onions, milk and every day bread ... I'm all set for at least 7-10 days. Oh, and I can't forget the kitties.

    Salmon (freezer stash) on the grill w/maple bourbon glaze; wild rice; glazed carrots (no recipes)

    SUN ...
    Garlic marinated smoked chicken quarters (hickory); parmesan baked potato wedges; sauteed broccoli - leftovers for later in the week
    ----------
    MON ...
    Ladies #1 and #2: Seared scallops w/champagne cream sauce, over sauteed kale, shallots and mushrooms; crusty bread; mixed berries
    Me: Chili (freezer stash) and a salad
    ----------
    TUES ...
    Pasta w/artichokes, black olives, onion, peppers, tomatoes, and mushrooms; in a light broth with a little cream and Greek seasoning; wedge of lettuce and Greek vinaigrette
    ----------
    WED ...
    Lady #1: Spicy mustard glazed ham; no mayo potato salad; brown sugar glazed carrots
    Lady #2 with Guest: Ham w/apple bourbon glaze and apple chutney; baked beans; spinach salad with roasted red and golden beets, blue cheese and pecans; pumpkin flan for dessert
    Me: Beer cheese soup; mini beer burgers with swiss and caramelized onions; german potato salad
    ----------
    THURS ...
    Lady #3: Depends if she has surgery
    Me: Leftovers or a salad topped w/leftover smoked chicken
    ----------
    FRI ...
    Ladies #1 and #2: Card/Game Night - TBD
    Me: Out, happy hour with friends - probably to our seafood place
    or ... scalloped spuds w/sausage; broccoli, peas, or lima beans
    -------------------------------------------------------------
    Breakfast: yogurt, cottage cheese or fruit
    Lunch: leftovers if any
    And ... don't forget to clean out that pantry, fridge and freezer.
    This week, I only spent 25.00 on necessary items - the rest; using up what I had.

    Morning everyone icon_biggrin.gif Having super fall weather, leaves are changing. Love this time of year. Charmie--so happy your eldest will be home with you.

    Here is the plan, Mon-Fri:

    Monday: JV football game--Black Bean Rice Burgers, root veggie chips, salad

    Tuesday: Simply Good Chicken Casserole, steamed broccoli, and salad

    Wednesday: Cider Pork Chops, steamed asparagus, roasted sweet potatoes, salad, and Apple Butter-Pecan Cake

    Thursday: Hay ride, Easy Quesadillas, Cheese and Rotel Dip with chips and salad

    Friday: Eat Out after HS football game; having friends over to play cards while we wait up for the teens--Tennessee Hot Chocolate

    Work Lunches: Cheeseburger Soup w/ Cornbread (Bread Machine) and Club Wraps

    Breakfast: Southern Sausage Cream Gravy

    Snacks: Popcorn Balls

    Had them on hand..used them instead of croissants

    Ham, tomato, Mexican three cheese

    Will try and take a photo of a slice for the lunch of DH lol



    Have made this recipe HEAPS of times...this time I halved the recipe...used 8 oz ham, 8 oz cheese

    The recipe simplicity and versatility always does please!

    Manicotti was good but timing is off - takes about 2 hours rather than the 1 1/2 hours as stated in the recipe.
