For the next 3 days ... basically leftovers.
Chicken and rice from the freezer with a salad
Tonight was my leftover stuffed acorn squash, with corn and a tomato salad
Tomorrow, french onion soup and a french roast beef dip
Then, I have more chili I could make and serve over corn bread
I also have salmon which I could easily grill, with a baked spud and veggies
So, this week will be all about anything quick and easy. No real plan, play it as we go.

Computer at least one of them is home. Mostly fixed. Still need an internal bat. But otherwise fine, at least so far.
The other 2 need parts, on order; but glad to have one at least.
Menus look good.

My ankle, the sprained one, which was also the one I broke this year, was sore, purple, blue, black ... and NOW, yellow green, so on the mend.
Sore, but swelling gone and walkable, just tender for a while.
My back, I haven't been taking it as easy as I should, but also on the mend. Easier then what I normally do. Never had a back issue, so, new to me. But, it is OK? They think it was an old car accident injury, that just with age acted up. Nothing much; but my chiro gave me a great 3-4 exercises to help strengthen it.
Basically nothing more than getting old, but nothing serious; but painful doesn't begin to describe it.
But, this week ... yes, and thx guys for the well wishes. Just going easy with freezer items this week. I do love my freezer.
Anytime I can have Chicken and Rice Casserole w/green beans; white bean chili and corn bread; pork stir fried rice; french dip and onion soup; or a black bean and corn burrito with spanish rice ... ALL from the freezer. I am happy.

The rest of the week; I'm doing a pasta, with NO meat tomato sauce; also Freezer Stash
Leftover brown and serve sausages mixed with scalloped potatoes (all freezer stash again) and a fresh salad
Sloppy Joe mix, another freezer stash; and onion rings, what else, freezer
Salmon, olive crostini, Sauteed corn; grilled Salmon. Corn, freezer, just saute in butter on the grill. Crostini, already grilled, and frozen; salmon, just grill; and the olives ... a store bought tapenade from my local Italian market. A treat I get now and then.
And, I have a container of mac and cheese too. Maybe a simple hot dog or sausage, I have those too in the freezer. Just grill and enjoy.

So you can see my idea for this week. NO groceries, other than milk and cat food.

Friday - leaving open for stretch room
hope you like the crockpot soup -- it went over big here!
We loved the soup - we called it a stoup, cuz it was very stew like. I cut my meat and vegies large. Thanks for posting it on your menu!!

I call it my Simplicity salad
something in the way it just came together...not in any professional photography way...just ...well spoke to me today lol
Prosciutto, cos lettuce, bonachini, perino tomatoes (are beautiful) cracked pepper and spritzed balsamic after the photo was taken lol
