    Question about keeping bread dough

    wave.gif It's fall and I'm back to give bread baking a whirl again.
    I am making Crusty French Bread - it is on it's first rise.

    I want a loaf for tonight but want to make Hoagies on Friday. Would it be better to cook the bread and the sub rolls today after the 2nd rise or can I put some dough in the fridge for a day or so for the rolls.

    I just thought it might be great to have fresh baked sub rolls but I don't know if I can do it this way.

    Take out what you need for today, shape and then let rise the second time.

    Keep the part that you want to bake later in the fridge - well wrapped in plastic - you don't want it to dry out. It will only improve in flavor.
