This week was fun ... the last week of my Catered Lunch Group. NO more lunches for 45 every day. It is relief, but I did enjoy it. Back to normal for a bit. I have 2 small weddings in Oct and Nov, and am looking at heading to the mountains for a long weekend if I can fit it in.
Still hot down here, but in the 70's in the am and late night, which isn't too bad; but 80's during the day. Fall isn't here yet; but, I know some of you are enjoying it.

Just me, so leftover cornish hen from Fri night. Maybe a wrap sandwich; or, just throw in a cooler with a couple of cold beers and head to the beach.

Ladies #1 and #2: Asian salmon with a warm broccoli slaw; orange salad
Me: Pan seared tilapia in a panko crust; warm sweet and sour broccoli slaw; roasted potato wedges

Me: Leftover chili; corn bread; maybe a salad

WED ...
Lady #1: Grilled pork tenderloin in an fresh herb and lemon marinade; roasted potato wedges; brussels sprouts; mixed berry salad
Lady #2: TBD company, but not sure what she wants. I'm guessing a beef tenderloin and traditional sides
Me: Busy day so, a tuna melt, chips, and a pickle; or I could stuff the other half of the acorn squash with sausage, onions, and apples.

THURS ...
Lady #3: Pork tenderloin (Asian flavor, recipe TBD); cucumber, onion and fennel salad; fried rice; almond green beans
Me: Work, so taking a Salad (need a veggie night) - greens, egg, cheese, bacon, olives, beans, tomato, onion, etc.; maybe a warm bacon dressing

FRI ...
Ladies #1 and #2: Game/Card Night - TBD
Me: Out I think; or a g/f for dinner. Pork chops; some kind of baked spud and brussels sprouts.

This week, I am really trying to use up a lot of staples. I only want to buy what I need until I use the older stuff up.

Our week looks like this:
Sunday: Apple butternut soup in a bread bowl. This is mostly for me, anyone who wants a different choice can search thru the leftovers.
Monday: Burgers on the grill, baked beans, peaches, carrot sticks
Tuesday: Simple Enchiladas Casserole
Wednesday: Leftover night!
Thursday: Busiest night of the week, so it's grilled cheese and tomato soup!
Friday: Chicken and Bean Stew
Saturday: My version of Ham and Sharp Cheddar Biscuits with a green salad on the side.

LOVE chopped salad with all the colour ingredients JUST like my personality lol
Like the before (I added Southwest dressing tossed) Looks like a totally different salad!
But was YUMMY!

Wow, some great looking menu's. See alot of recipes I need to check out.
Saturday was pulled BBQ pork
Sunday kids fended for themselves while DH and I stopped for pizza on the way home from bowling.
Monday oldest DD made chicken thighs and mac-n-cheese
Tuesday: hamburgers, baked beans, french fries
Wednesday: John's Lasagna with garlic bread
Thursday: My Lovely Pork Roast (Rib Tip) with roasted potatoes and veggie
Friday: leftovers
Thinking about baking some pumpkin muffins or bread this week too.

Can't go wrong with lasagna in this type of weather and YUM re the pumpkin muffins...have a secret family recipe?

It's a recipe I got from a friend. I'll cruise through the butternut soup recipes on here and will post it if there are none similar!
