    Menu for Week of October 6 thru October 12, 2012

    Hello menu peeps!!!! How is you all!?
    Today is gorgeous Fall weather...finally! But of course, I'm heading out of town this weekend to Phoenix where it's still gonna be in the 90's!! Not fair!!!
    BUT...I get to see my eldest DS play professional baseball for the first time! So excited for that! We're going just for Sat and Sun...a quick trip. So no cooking this weekend for me.

    Here's my menu for the rest of the week. Share yours!!!!

    Saturday and Sunday - Phoenix!!

    Monday - Mexican Chicken-Corn Chowder with cornbread and salad

    Tuesday - Pork Chops With Horseradish-Maple Glaze and and Autumn Chopped Salad from Pinterest.

    Wednesday - Mini Pork and Apple Meat Loaves with potatoes and corn

    Thursday - Carne Guisada (Mexican Beef Stew) with mashed potatoes and green beans

    Friday - Cherry Cola Roast (Pork or Beef) - this didn't get made this past week icon_cry.gif

    This week was fun ... the last week of my Catered Lunch Group. NO more lunches for 45 every day. It is relief, but I did enjoy it. Back to normal for a bit. I have 2 small weddings in Oct and Nov, and am looking at heading to the mountains for a long weekend if I can fit it in.
    Still hot down here, but in the 70's in the am and late night, which isn't too bad; but 80's during the day. Fall isn't here yet; but, I know some of you are enjoying it.
    C - enjoy the game this weekend!

    Just me, so leftover cornish hen from Fri night. Maybe a wrap sandwich; or, just throw in a cooler with a couple of cold beers and head to the beach.

    Me: Leftover chili; corn bread; maybe a salad

    WED ...
    Lady #1: Grilled pork tenderloin in an fresh herb and lemon marinade; roasted potato wedges; brussels sprouts; mixed berry salad
    Lady #2: TBD company, but not sure what she wants. I'm guessing a beef tenderloin and traditional sides
    Me: Busy day so, a tuna melt, chips, and a pickle; or I could stuff the other half of the acorn squash with sausage, onions, and apples.

    THURS ...
    Lady #3: Pork tenderloin (Asian flavor, recipe TBD); cucumber, onion and fennel salad; fried rice; almond green beans
    Me: Work, so taking a Salad (need a veggie night) - greens, egg, cheese, bacon, olives, beans, tomato, onion, etc.; maybe a warm bacon dressing
    ----------
    FRI ...
    Ladies #1 and #2: Game/Card Night - TBD
    Me: Out I think; or a g/f for dinner. Pork chops; some kind of baked spud and brussels sprouts.

    This week, I am really trying to use up a lot of staples. I only want to buy what I need until I use the older stuff up.

    Back to cooking after shoulder surgery - didn't cook for 2 months!

    Saturday: Simply Sour Cream Chicken Enchiladas (using leftover chicken and light everything else) -this was good!
    Sunday: Baked Chicken Thighs With Potatoes w/carrots
    Monday: Italian Countryside Beef Soup for the Crock Pot
    Tuesday: out with friends
    Wednesday: fast food night
    Thursday:veggi stuffed shells (new recipe from newspaper)
    Friday: fish and saiad

    Hello all; having great fall weather here. Lovin' every minute of it.
    Menu: Monday-Friday
    Monday: JV football game night--Beginner's Pulled Pork, Mustard Cole Slaw, dill pickle spears and Apple Cherry Punch

    Tuesday: Baked Mushroom Rice, steamed broccoli, baked sweet potato and salad

    Wednesday: Red Chicken Chili, cornbread, and salad

    Thursday: Spicy Shrimp Casserole, steamed carrots, salad, and Best Ever Pumpkin Pie (mom and dad and in-laws are coming for dinner)

    Friday: no football game icon_biggrin.gif Paella and salad

    Work Lunches: Chunky Lentil-Cashew Soup and Zesty New Potato Salad

    Breakfast: Irish Oatmeal

    Snacks: Pumpkin Muffins

    I've been gone for a bit, but back now. I've kept up with menus, just haven't had much of a chance for posting - life has kicked in to high gear!

    Everyone's menus sound (and look!) fantastic - thanks for sharing!!

    Our week looks like this:

    Sunday: Apple butternut soup in a bread bowl. This is mostly for me, anyone who wants a different choice can search thru the leftovers. icon_wink.gif

    Monday: Burgers on the grill, baked beans, peaches, carrot sticks

    Tuesday: Simple Enchiladas Casserole

    Wednesday: Leftover night!

    Thursday: Busiest night of the week, so it's grilled cheese and tomato soup!

    Friday: Chicken and Bean Stew

    Saturday: My version of Ham and Sharp Cheddar Biscuits with a green salad on the side.

    I WISH you all could see..

    what is LURKING underneath for me! lol

    Turkey, avocado, sun dried tomatoes, finely diced lettuce, mozzarella cheese topped with snow peas spritzed with balsamic vinegar and freshly ground pepper

    Was YUM!

    Ok, photo No 2 was before the crop...no colour edit

    please feel free to crop and play!







    was difficult to photograph because of the snow peas on top

    so re the crop tried to lessen the affects

    WHOO HOO!
