What's your all-time favorite recipe that uses green chiles? At this moment I'd have to say either homemade chiles rellenos or Charlie's Green Chile Stew.

I love green chiles, making green tomatillo spicy sauce with them is an all-time favourite.

Guacamole with diced green chiles (jalapeƱos or serranos) also make it to the table with a 'mmmhhh' coming out of everyone.

But definitely, my favourite chile recipe is, as well, chiles rellenos, made with poblanos. Roasted, Stuffed with Oaxaca cheese, Dipped into well beaten egg whites and fried. Then served with a caldillo (tomato soup). It's 10 in the morning and I'm craving for this already.

Of course I agree that green chile rellenos are my favorite.

However, as a close second, it is Green Chile Chicken Stew. I posted my personal recipe for it here: http://www.food.com/recipe/green-chile-chicken-stew-324788

However, you can totally short-cut this by just adding green chiles to some canned cream of chicken soup. Add as many other ingredients as you like to fit your larder and time.

Next in line - ham, cheese, and green chile omelet or quiche. Both are delicious as long as you add enough chopped green chiles.

By the way, note that green chiles are spelled "chile" and chili con carne is spelled "chili." A fine point, but one that will serve you well while shopping.

One more use for green chiles that I love is on top of a cheeseburger (with bacon is even better.) Another sandwich fav is green chile, turkey, and jack cheese grilled.
