Oxtail Stew, like so many other Caribbean Dishes that share the same name differ from island to island. What you find in Trinidad will vastly differ from what you find in Jamaica.
In Trinidad the oxtails are marinated, then browned in molten sugar to caramilize the meat. This adds a golden hue to the meat and also imparts a sweetness, that combined with the marinade, creates a very unique flavour.
In Jamaica they do not brown the meat, and the stew has lima beans and tomatoes. The two stews do share chives and thyme in their ingredients.
Cuban Rabo Encendido seems to take the best of both along with a healty dose of wine.
