Oh -- I know that there are some lovely bean or grain-based dishes that include cheese or cream. However, my husband does not eat cheese at all, so that's a further restriction.

Hi Kimber and welcome to the forum! We are a small group here but people do come by. As for the casserole recipes you are looking for, I wonder if you have seen the Vegetarian/Vegan Forum? For grain based dishes without dairy, the Vegan recipes would be a great resource for you, There are some very experienced vegans active in that forum. You can find it here:
