    Question:Zoobana (Zucchini Banana) Bread

    Zoobana (Zucchini Banana) Bread
    I have thawed out a 2 cup package of zucchini to make this recipe will it still be tha same amount in the bread??
    And, am I to drain the liquid?

    I suspect you're not going to get the same results with frozen-and-thawed zucchini. If you add the liquid to the batter, it will be too runny and won't rise or bake properly. On the other hand, the zucchini will have lost volume and texture from freezing. Personally, I would squeeze the zucchini dry, add it to the batter and hope for the best.

    Good morning Lynn. Lynn no matter how many times I have looked over the recipe....I could not locate any eggs. icon_redface.gif As you know Lynn this type of recipe relies on the water in the whoke eggs for addional leavening (STEAM)

    Maybe you should contact the original author for the info. Or otherwise I can figure out haw many you will need for this recipe. icon_lol.gif

    One reviewer added three eggs, another mentioned it turned out well for having no eggs. It does have a little baking powder and baking soda for leavening; I'm thinking the acidity in the applesauce might be enough to react with the soda?

    My mom always squeezed her frozen zucchini..Seemed to make the batter too runny.
