    Need a recipe for cheese sauce that does not include flour

    I just began the Atkins diet last week (Induction phase) and flour is not on the 'acceptable foods' list. I have been asked to make broccoli with cheese sauce for a special family dinner tomorrow, and I have two choices: I can make cheese sauce using flour and not partake of the dish, or I can find out how to make cheese sauce (with real cheese) from one of the pros.

    I am allowed to use cream/heavy cream, butter, cheese (other than cheese products such as Velveeta), so if anyone knows what I can do with that, I thank you!

    I used the sifter and eliminated any flour from cheese sauce - these are the ones from just the first two pages of results that I thought would work - Hope this helps.
