Hi menu pals!!! how is everyone?
I've enjoyed having my eldest DS here this week, but he leaves Sunday afternoon for 3 more weeks. I've made a lot of his favorites this past week. But doing pizza tonite!
I've been trying out the new meal planner this week. I'm loving it!! Have any of you tried it yet? Let me know what you think.
Saturday - Menfolk are going fishing, so no cooking for meal, but making some things for DS to take with him to AZ.
Sunday - Torta Asada (Mexican Carne Asada Sandwich), with Salad
Monday - Kenyan Ground Round Curry with rice and vegies
Tuesday - Pineapple-Black Bean Enchiladas with rice and beans
Wednesday - Tomatillo Posole with cornbread and salad
Thursday - Classic Baked Spaghetti with bread and salad
Friday - leaving open for stretch!

More cooking later today! As made pea and ham Crock Pot Soup last night...the secret is using chicken stock  ham hock, 2 carrots, two celery, bay leaf, 2 potatoes, black pepper, peas, water

I have always loved chopped salads; don't know why and perhaps is just me, but i think they taste better
this one, hot salami, feta, sun dried tomatoes, kalamata olives, finely diced lettuce, spritzed with balsamic vinegar and cracked black pepper southwest dressing!
YUM!
This is what 100 grams looks like (have to have each and every meal) so don't think will be wilting away anytime soon

Morning everyone  I have the day to myself as husband and kids are going to Fayetteville for the game.  Very rarely do I get time to myself and I am really looking forward to it. Facial and pedicure
Here is the plan Mon-Fri:
Monday: JV game night-- Cuban Sandwich, chips and salad
Tuesday: Sherry Chicken With Rice, steamed broccoli and salad
Wednesday: Easy Slow-Cooker Bean Dip, chips and salad (I am so craving bean dip)
Thursday: Enchilada Pie, steamed carrots, salad and Fall Harvest Cake
Friday: Eat Out after HS football game; Cocktail Time-- Banana Pudding
Work Lunches: Hash Browns Potato Soup w/ Dilly Cheese Muffins and Chicken Salad Supreme
Breakfast: Vegetable Breakfast Pizza
Snacks: Monster Cookies

Week 6 of 8 for the Catering Lunch group; and Lady 3 still on vacation; but Ladies 1 and 2 are still here. Busy, and still dealing with AC problems; looking forward to a BIT cooler weather.

Catered Lunch: Reubens (choice of corned beef or turkey) and a mushroom, celery salad

Me: Leftover ribs; tomato cucumber salad; and a roll

Catered Lunch: Back by popular demand, soup bar. Corn chicken chowder; roasted tomato w/spinach; beef, potato and onion; basket of fresh bread; and a small salad

Lady #1: Grilled sausage casserole w/peppers onions, potatoes and sauerkraut; pumpernickel rolls
Lady #2: Company, small party. A bacon wrapped giant scallop topped with a maple mustard sauce to start; herb crusted pork loin; potato gratin; glazed baby whole carrots; and apple crumble
Me: Steak pizza with mushrooms, onions, cheese and tomato

Me: Salmon, on a plank with brown sugar; zucchini on the grill, balsamic onions

Ladies #1 and #2: TBD, Card/Game Night
Me: G/F over, not sure. I'm thinking butterflied cornish hens on the grill, with a Asian glaze; Baby bok choy sauteed with an light vinaigrette; and grilled baby vegetables

The flat lamb souvlaki is in the crock pot; so are the pitas. And then, the mix of tomatoes, lettuce, red onion is in a another bowl. People can just help themselves to the soft bread. Top with a couple of the meat balls, the salad, and top with the tzatziki.
A great potluck buffet dish. With a big crock, I just wrap the wraps in foil and no need to have 2 crocks.

I just wrap about 5 no more in foil. I usually set a couple foil balls right on the bottom so the wraps ... wrapped up in foil didn't set directly on the bottom. But just packages. It keeps them very moist.
My friend, does the 2-3 foil balls on the bottom but she wraps hers in parchment. She said it works great. I haven't tried that, but I bet it would work.
Obviously you don't do this with just 1 pkg of wraps or tacos; but works great, when you are serving 8 or so people and you you need a lot more; especially with a party when you don't want to keep reheating them. It works fantastic.
Wasn't my idea, but can't beat it.Pot lucks, big parties, taco bar, etc, perfect.

Basically it is a dump and mix type salad
finely diced cos lettuce, feta diced small cubes, roll prosciutto (or can roll salami) and cut in fine pieces
Kalamata olives, cut in small pieces, sun dried tomatoes...same thing
Spritz with balsamic vinegar (i have one of those spray cans) then add 3/4 - 1 tbsp South West dressing...I like Paul Newman's and add jalapenos diced
mix with your hands, place on the plate, photograph, eat and enjoy too!
