Chile Rellenos is one of those "how can something so simple be so good" dishes.
First off, you roast poblano chiles until blackened. Allow them to cool to the touch and peel off the charred skins. Next, you slit them open and stuff with a melty Mexican cheese like queso Chihuahua (if you can't find that Montery Jack will do), dip in a egg batter then fry to a golden brown. In Central America Chile Rellenos are usually served with a tomato sauce. Here in the States, red or green chile sauce is the norm.
Another popular variation is to stuff rellenos with a minced pork/raisin/nut muxture, somewhat similar to empanada filling.
