DH and I enjoyed Spicy Onions and Bratwurst, once again. I was inspired by Chef Shapeweaver to make potato salad. I really cheated on this one. I bought canned whole potatoes, which I have heard people talk about using, and to be honest, for a small batch - DH doesn't like it - it will do the trick. I made DH Tuna Salad to go with his brat. I highly recommend this recipe. It is phenomenal. Whenever we have brats, I HAVE to cook the onions to go with. I have made the onions to on my hamburgers, and hot dogs before, also. I crave them. LOL

Here is a shot of just the onions in the pan:

And, a shot of my cheater potato salad:

If you can see the "relish" on the bottom of the brat - that is a little of my own creation. It is green olives and mild banana peppers chopped coarsely together. I sometimes add onions to give it a little more oomph. Love, love, love it. I put it in egg salad. I use it on sandwiches. Gives everything a little more. icon_biggrin.gif

Deb - there weren't any eggs in the potato salad.Someone - ahem, ME, forgot to get some at the store. I totally agree that a potato salan needs eggs. But, I did have some bacon in the freezer, and I chopped that up and threw it in.
Do yourself a favor and make those onions with the brats. You will never make "naked" brats again. icon_biggrin.gif

CS - and everyone for that matter - I draw inspiration from you all. I look up to what you all accomplish, and strive to do my best. I like everyone's creativity when it comes to staging their pictures. Some inspiration is - wow, I haven't made "such-and-such" in a very long time, then I see a picture and the picture makes me want to make that item. Plus, taking pictures is just fun to do. icon_biggrin.gif
