Newbie "Fry Cook" Poster
My Mexican wedding cookies that I've made for years no longer hold their shape They flatten all over the sheet. What am I doing wrong?

Are you using real butter in them? If you are using margarine, many of them today have added water. They are not good for baking. You need to read the labels carefully and make sure it has at least 80% fat or you will not get good results.

Butter will spread more than other fats. Try chilling the dough. Also, if you are reusing your cookie sheets from one batch to the next, turn them upside down and run them under cold water. Hot sheets will also cause the dough to spread.

How soft is your butter when you use it? It shouldn't be super-soft, but just softened enough so that you can mix it in.
