Thanks Bonnie. This is up the road a bit on the edge of Alabama and Fl. First vacation on the beach in 7 or so years. Took a swim in the ocean this morning and walked out to a beach bunny laughing at me. (in a good way......I think?)
Brunch was sausage, gravy and Easy, Tasty Sourdough Buttermilk Biscuits.

Yesterday I made Bird Seed Bread (Abm), but baked at 375 deg. for 28 min. I have been making this one usually every other week.
These are doing their last rise before going into the oven.

I have been making these about once a week lately.

I've made JoeV's sandwich thins and really like them. The Bird Seed bread looks terrific. I have most of those seeds; need to bake it up.

Sounds really good, but I'm not sure I'll be able to find Amaranth. Perhaps at th c0-op?

I bought amaranth at one of Atlanta's farmer's market's and I've had it for a couple of years. I just don't use it much. I've popped it a couple of times like popcorn and tried to use it on top of a loaf once, but the grain hardened into tiny rocks. It's good inside breads though.
I see quinoa in the local stores (Publix) here but have not baked with it.

I use the quinoa as I have never seen amaranth. I do have some flour but didn't think that was what it was asking for.

I was about to say that I haven't baked lately, but I remembered that I am claiming what I make at work too. Today was Muffins for snack. I used a recipe from here that I have been using with great success, became one of my "go to" recipes when I make muffins. Today I left out the fruit, but I make them with all kinds of fresh and frozen fruits or chocolate chips.
Apple Oatmeal Muffins
Besides that I came home to do some canning.

I am beginning to think I dont sleep. LOL, second time this week, I am up after 6 hours of sleep. At least I had a good sleep while it lasted. Too much going on so I am restless. Back to work, with a new boss, finding out she was not well liked back in my home community, but am trying to keep an open mind, she has great ideas. My sister's breast cancer diagnosis. Plus just trying to fight with myself to get active again, to fight my Blues.
