Regular "Line Cook" Poster
I am trying to find a recipe with the following ingredients:
Chicken, Raisins, Pine Nuts, Mushrooms, Garlic, Oil, Penne
Any help you can give me would be greatly appreciated. I know how it is supposed to taste. I am fairly certain the ingredients above are accurate. I had two responses to a similar e-mail I posted, however, I don't think these recipes are what I am looking for.
Someone did send me a menu from a restaurant in Shrewsbury which had this exact chicken dish on the menu. I am hesitant to call them because I cannot imagine that they would give me the recipe!!!!

Call them. All they can say is no. Without knowing more I'm not sure anyone can give you the exact recipe but them. But be sure to butter them up, and do NOT call during their busy time or you'll be out in the cold. Better yet, go, order the dish during a slow period, then gush so much they just have to accomodate you. I grew up in MA and nothing there is all that far away from anywhere else.
Actually, with those ingredients, it should be pretty easy to just throw together. I'd saute the chicken in the oil, remove it, cook the mushrooms, then add the garlic (so it doesn't scorch), add the plumped raisins, a splash of wine (not mentioned, but I'd add some) a bit of chicken stock, some cooked penne, cook a minute, and it's pretty much done. Add the (toasted) pine nuts last so they don't get soggy. Raisins are often used in dishes with cooked greens, so I'd probably throw in some spinach or shredded Swiss chard, but you don't have to if that doesn't fit the dish you're after.

Here is another similar recipe you can play around with. Change the pasta to Penne and add the garlic and mushrooms.
