    Molly53, thank you so much! Your post never went unnoticed, but if I answered, my name would appear as "last post", which I did not want! It's far more interesting if a name appears which is not that of a forum host! icon_wink.gif

    It's very kind of you. Jollof rice is a staple in certain parts of Africa, and as usual with such trad foods there are many variations. It is not known or made (as far as I know) in my own country, South Africa.

    It is very sweet of you to contribute here, a forum which has slowed to a dead stop. icon_rolleyes.gif

    It appears to be very similar to Spanish rice or Mexican rice, which is very popular here in the USA.
