What is a good wine to use when cooking?

I like sauvignon blanc for white wine in a recipe, and usually a cabarnet or a merlot for red. I do not buy expensive wine - certainly not for cooking family meals.
If a recipe calls for just a little wine - 1/2 cup or less - I almost always use dry white vermouth. Vermouth is a fortified wine, and it will be good for a month after opening, longer if you keep it in the fridge. Cook's Illustrated recommends Gallo brand, it's usually around $3 or $4 a bottle in my area. Unless we are having wine with dinner, which we don't always do, I find it wasteful to open a bottle for just a little wine. The vermouth works just great.

Any wine you like to drink is a good wine to use for cooking!
If you are not a wine drink I would suggest 4 packs of wine - they come in small single serve bottles perfect for using in a recipe! This way you do not have to worry about the wine remaining in an opened bottle and you have 3 more small bottles that will be good whenever you want to use them!
