    I don't know if we have a thread started yet. I personally haven't done to much in the way of canning or dehydrating, as I still have lots from last year. My freezers are getting full though.

    I have canned:
    Blueberry/Cherry Jam
    Bumbleberry Jam

    Local Strawberries
    Rhubarb/Raspberry Freezer Jam
    Blueberry Crisp

    Been freezing veggies as they come out of the garden, Sugar Snap Peas, Shelling Peas, Carrots, Spinach

    Canned: peaches, spaghetti sauce, tomato juice, vegetable stock, strawberry jam, pickles, relish

    Frozen: the only thing I've frozen from the garden is some herbs in olive oils, but I make extra portions of meals and freeze all the time. I also make a huge batch of dinner rolls and parbaked them so I can pull them out and have fresh baked rolls in 12-15 minutes any time. Whenever I make cookies, I make a double batch and freeze half the dough for later use too.

    Dehydrated-nothing, I don't have a dehydrater, but I'm going to try drying some herbs in the oven.

    I have been really slack this year. The only thing I have canned is tomato sauce. The husband says I can't make any more jelly until we use up a good portion of the shelves and shelves and shelves I already have. icon_sad.gif I really like making jelly so when I make it, I make a LOT! icon_lol.gif

    WOOHOO, the Corn Lady (her nick name for the fact she sells mainly corn), has set up. I picked up 5 dozen from her today. All that has been frozen on the cob. I just need some more for niblets. Kinda sad though, she didn't have peaches this year.

    Found provincial peaches at the store, not as local as I like but better then nothing. I made 2 batches Summer Fruit Cocktail in 1/2 cup jars yesterday (36 jars total, with some leftover for the kids to snack on). Still waiting for them to ripen some more, thinking along the lines of Peach Nectar and frozen slices. Wasn't able to get more corn from my local person.

    But there is a farm not too far away I will have to make a mad dash there next week. See what I can find for really cheap. Last year I spent around $60 and came home with a full load, 15 dozen corn, 10 lb potatoes, 8 peppers, 4 onions, 1 small seedless watermelon, and a few other things.

    (btw, diabetic or NOT, I wouldn't recommend canning these is plain water.. they taste off.. next time I'll use some NSA pineapple juice fresh)

    Peaches are done. I froze 3 industrial sheet pans full. Also made 8 pints Peach Nectar, would have gotten 10 but one of the girls wanted some right away.

    This year, I've frozen:

    Green beans (from my garden - woo!)
    corn (from the public market)
    A few apricots

    And I've canned:

    more tomatoes
    tomato sauce
    blueberry jam
    apricot jam
    peach jam

    All the jams are low-sugar, no pectin, for the first time - and they set up beautifully! icon_smile.gif

    Planning to do a batch of chicken stock this weekend - my freezer is packed full of chicken junk that Needs To Go!

    Forgot to add that I have also frozen green chile (not done), froze some green beans, okra and some shredded zuchinni for bread later.

    Molly, I just remember nectarine jam.

    I know I have more but I can't remember what right now. Those are my Christmas presents!

    Our fair is the first weekend of October and I have to decide what I will enter and how much more I will can by then.

    I am making a yellow pear and lemon boy tomato jam. I forgot, I made 1 jar of pickled pear tomatoes just because I have so many.

    I planted a garden this year and I have tons of tomatoes.

    Edited to add that I have also been dehydrating chiles. I have done cayenne from my garden, jalapenos and some of the crookneck squash from my garden too.
