Menu for Week of August 18 thru August 24, 2012Go to page 1, 2, 3, 4 Next Page >>Hi Menu friends!!!! How is everyone? It has been soooooooo hot here. Over 100 for over 2 weeks now. This morning it was 90º at 8am!! Sheesh! Don't like it at all!!!! I'm nervous to see our electric bill this month.
Anywho...I'm still doing the tour and now we are in Britain and India, so recipes will reflect! Here's my menu. Share yours!! Saturday - going to Susan Feniger's restaurant, Street, with friends from SeriousEats.com...excited!!! Sunday - Bangers and Mash With Onion Gravy with vegies Monday - Easy Spaghetti and Meatballs using leftover meatballs in freezer, with salad Tuesday - Slow Cooker Chicken Tikka Masala with rice and salad Wednesday - Tortellini with Balsamic Brown Butter Sauce, salad, bread Thursday - Easy Shepherd's Pie with salad Friday - Office Party!! Boy, you are early. Almost ready. Trying to finish up soon. Just got some info for next week.

My Ladies #1 and #2 are still on their cruise. They came back to port but are now in Scotland and Ireland for a few days before returning next week. So another week off Still cooking 45 lunches every day for lunch for our new client. Working well; but doesn't allow for much sleep. Quiet otherwise around here. Been hot like you C, not 100, but very high humidity daily. Would love a vacation in the mountains soon ... cool weather, and beautiful sunsets ... too much to ask? ------------------------------------------- SAT ... Planned dinner with a friend; but cxl, so just me. Busy day, so plan to make breakfast, or have a frozen pizza I can 'doctor' up with a bunch of veggies. ---------- SUN ... Soup Day/Bread Day: I still have both in the freezer Dinner: Steak (freezer stash) peppers and mushrooms tortilla wrap with cheese; onion rings ---------- MON ... Lunch: Sesame soba noodle salad w/chicken; mixed orange salad A mix of a hot soy and citrus vinaigrette over soba noodles, with cucumber, eggplant, chicken and scallions. Tossed together and served over crispy iceberg lettuce. The orange salad is a mix of navel, tangelos, blood oranges, and ruby red grapefruit, with an orange blossom water and powdered sugar dressing Me: Salmon or tilapia with asparagus and a crab hollandaise; rice pilaf ---------- TUES ... Lunch: First time buffet Small cucumber bites stuffed with shrimp salad; cherry tomatoes stuffed with an herb goat cheese, proscuitto, and scallion stuffing; A roasted vegetable platter served with a red pepper, hummus, and spicy green onion and olive dip. Also, a platter of fresh sliced cheeses, deli meats, fruit, bread, rolls, crackers, etc. Me: Attending a brunch - it is a working meeting. I am taking some of my smoked salmon I made last week with a dill sauce. So, since I have to work ... I guess leftovers it is. I have some soup, chicken, even mac and cheese in the freezer ---------- WED ... Lunch: Poached grouper with a slice of a Bloody Mary Terrine over a bed of baby greens Poached grouper in a white wine, onion, peppercorns, lemon and dill broth; (whatever fish is on sale) served with a very light creamy cucumber sauce. And, a Bloody Mary Terrine (a mix of tomatoes, red peppers, and a home made Bloody Mary sauce mixed with gelatin to set), sliced over a bed of greens Me: Meeting a friend from work for a couple of beers, appies, and to go over work issues. So, I presume that will be dinner ---------- THURS ... Lunch: Asian pork lettuce cups with a fresh vegetable salad Asian stir fried pork with, onions, shitaki mushrooms, and bean sprouts; tossed with a spicy sauce and served chilled in a lettuce cups with a side of a carrot, avocado, onion and zucchini salad with a rice wine vinaigrette Lady #3: Stuffed Mediterranean pork loin, sliced w/white wine tomato sauce; sauteed spinach; baby roasted potatoes; Dessert TBD Me: Corn and cheese quesadillas with green chilies (sour cream and salsa); salad with avocado, tomato and cucumber ---------- FRI ... Lunch: Tuna sandwiches and fresh fruit salad Either curried or Mediterranean tuna croissants; with either a watermelon, cucumber, honeydew, and strawberry mint salad; or possibly a mango, cucumber, watermelon, and basil salad Me: g/f for dinner - Sweet and sour pork over scallion rice; fruit salad --------------------------------------------- Breakfast, cottage cheese this week Lunch ... probably none, or just a cup of soup And, don't forget to clean out that fridge, freezer, and pantry! Monday: Dad's Best Brisket, Baked Beans Quintet, Potato Salad, steamed green beans Tuesday: Caribbean Grilled Tuna, grilled veggies, and salad Wednesday: Crawfish Cornbread, steamed broccoli, and salad Thursday: Baked Rotini, bread sticks, salad, and Cranberry Tea Friday: Eat Out Work Lunches: Cold Macaroni Tuna Salad and Naan Chicken Sandwich Snacks: Pool Mix Bangers and Mash and Spag & Meatballs - mmm I could really go for that!
I also love the sound of that orange salad! It has been raining so much all month - bugs all over outside and creepy spiders crawling around. I am still finishing up the meals I planned for last week, so they will get added into this week's menu. Really low on funds (as I always am by mid month), so still trying to use only what I have except for the fresh veg & dairy. Meal #1: (tonight) Doctored Spaghetti Sauce using ground beef, bread machine Italian bread, side salad Meal#2: still have to make the Steak Bites from last week, with either Mashed Cauliflower or Carrots or both, also with a side salad Meal #3: something using up pork loin chops from my freezer Meal #4: leftovers (or soup & sandwich) Meal #5: pizza (will most likely be frozen or maybe a BBQ chicken version) Meal #6: breakfast for dinner or leftovers Meal #7: something using chicken or tuna Lunches: I am probably making some egg salad or a chickpea salad for my dd to take to school for lunch, possibly some Japanese riceballs too. Breakfasts: Going to make some waffles (using up leftover pancake mixes) and have those ready in the freezer to help with getting out the door for school. I have Bisquick, Red Velvet, and Gingerbread mixes to use up. This weekend, I will also probably bake some biscuits and make sausage gravy. Desserts: I hope to make a batch of orange cookies that I promised a while ago and never got made. I am still working on some jello fruit salad I made for myself. Hi,
Sympathy to those suffering with heat...we've been through that but right now we have temps just in the 80s. We've actually been able to take some breaks from AC by sucking in cool morning air with the fan and then closing the windows and shades once it starts to warm up. Nothing too exciting around here in the menu department. Garden-wise the "big" news is that my 12' sunflowers are now all drooping over from the weight of their flowers. I've never grown them before and they are just fun to observe. Sat – Kenyan Ground Round Curry with veg and tortillas from Wed (will double curry) Sun – I think we are going to a concert at the downtown pavillion, so we will probably just buy something portable on the ped mall to eat after we stake out some seats. Mon – Baklava Salmon (Salmon With Honey, Butter, Walnuts, and Mustard) with market veg and grits Tue – leftover curry from Sat w/frozen veg and whatever leftover starches we have Wed – Creamy Garlic Chicken with veg from market and millet Thu – Pasta With Roasted Garlic and Cherry Tomatoes with white beans Fri – Unbelievable Chicken (grill) with potatoes (micro’d then finished on the grill) and some kind of veg --M SarasotaCook wrote:

HF, love BBQ pizza never thought I would be, but it is delicious. Pls send some of your rain. You couldn't tell by the radar, but poor little Sarasota has pretty much missed all the rain. It finally rained for about 30 minutes yesterday; and that was the first in about 3 weeks. And bangers and mash does sound good C - I think the only time I have them is for St. Patty's Day, and not sure why not more often.
