Welcome to Jordan and Kuwait!
Jordan is, of course, an ancient country but somehow it remains rather unknown in many lands.  Arabic cuisine delights the gourmet, and feasting is a preoccupation not only of Jordan, but of the Middle East as a whole. In culinary terms, the Middle East enjoys one of the world's most sophisticated and elaborate cuisines, and are rated among the finest foods in the world. Dishes will even satisfy the health conscious because many of them are made with grain, cheese, yogurt, fresh and dried fruits and vegetables. With the use of these grains and vegetables, meat goes a long way and even the simplest ingredients can produce a surprisingly attractive creation. Jordan's cuisine, although unique, is part of this distinctive culinary heritage, which have been savored for well over a thousand years. Below is a well loved Jordanian dish: Mansaf The national dish of Jordan is Mansaf: lamb seasoned with aromatic herbs, sometimes lightly spiced, cooked in yoghurt, and served with huge quantities of rice. Feasting on Mansaf is taken seriously, and hours are spent in its preparations.

Kuwait, officially the State of Kuwait, is a sovereign Arab state situated in the north-east of the Arabian Peninsula. Historically, the region was the site of Characene, a major Parthian port for trade between Mesopotamia and India. The Bani Utbah tribe were the first permanent Arab settlers in the region, laying the foundation for the modern emirate. By the 19th century, Kuwait came under the influence of the Ottoman Empire. After World War I, it emerged as an independent sheikhdom under the protection of the British Empire. Kuwait's large oil fields were discovered in the late 1930s.  The influence of Islamic and Arab Culture on its architecture, music, attire, cuisine and lifestyle is prominent. Seafood has been the mainstay of the Kuwaiti diet for centuries. Traditional Kuwaiti cuisine includes machboos diyay, machboos laham, maraq diyay laham which borrows heavily from South Asian cuisine and Arab cuisine. Imawash is another popular dish. As in other Arab states of the Persian Gulf, Kuwait takes part in the tradition of Qarqe'an during the month of Ramadan.

In the Kuwaiti section I will explain what machboos diyay, machboos laham, maraq diyay laham are,
Machbous is a fragrant rice dish and diyay means chicken in the Kuwaiti Arabic dialect, laham means meat and here would be lamb, marag (q) means stew. My husband grew up in Kuwait so I have many recipes from that part of the Middle East and a partial understanding of their dialect.

And you said " Imawash is another popular dish" I wonder what that is. A quick Google search returned nothing. I am interested if anyone knows or can figure it out.
