Menu for Week of August 4 thru August 10, 2012

Hello my menu peeps! How is everyone doing on keeping up with their menus and cooking? Seems like we've slowed down a bit for the summer, but that is normal.
Hectic times at my house with my stepdaughter and 2 teenaged grandsons visiting! I'm exhausted every day! But it is a good thing.
I really don't know what most of the day to day plans are, so I'm just gonna list the recipes I plan to make.
So, here's my menu, such that it is. Share yours!!!
Tortured Chicken - Beer Can, Bobby Flay's Rib Rub for beef and pork ribs, Butter Smashed Potatoes, Charred Onion Slivers all for a BBQ on Sunday.
20 Minute Creamy Pesto Chicken and Bow Ties
Pollo Asado and The Ultimate Salsa Fresca
Charmie's Snickerdoodles
Bev's Macaroni and Cheese
and probably much more but this week is really winging it!

I love the name, tortured chicken and charred onion slivers, lol.
Sounds good, I hope you enjoy family while they are there. I know what you mean with the NO menu; you just have to sometimes wing it.
Slow, very slow, but in a lot of forums; summer, vacations right before the start of school I suppose. It usually is slower during the summer anyways.

Twinie Bakes Too!
What a fantastic job. Those look amazing. And yes, that is a sweet I could have. Gingerbread, is sweet, but not that sugary icing sweet. Great job. I love the hearts. Your friends will love it! If they don't, send them my way.

THIS is WHY Twinie IS excited as TWINIE does NOT bake!! lol
Although two baking things in one week the other being the Orange and Poppyseed Muffins...DH devoured those too! lol
I believe one is either a baker or a cook...but is fun to dabble to the dark side every now and then
Had to put the cookies in NON reachable areas ie meaning DH would have to get up to have ANOTHER one lol as there won't be any left for our friends when they come and visit today lol

NOTE: They were crunchy on the outside, soft on the inside, the way they were supposed to be...Don't know WHO was more excited about them DH or ME! lol

Well, this past week got mixed up a bit with my work schedule, but I had a feeling it might. Next week both my Ladies are on vacation - a 2 week cruise; and Lady #3 is on a restricted died after a procedure - so I'm FREE. However, I have a new client starting Monday the 13th. Lunches every day for 35. I am working with a friend who has an approved catering kitchen, and we will be working together and sharing time; but that will be very busy. It is a 6-7 week gig. So this coming week, I will be preparing and figuring out menus.

Me: A version of Cabbage Rolls; mashed cauliflower with feta cheese; cucumber and onion salad with a rice wine vinegar

Grilled stuffed Veggie peppers (new recipe), stuffed with corn, feta, olives, tomatoes, cheese, etc; whole wheat rolls and some kind of salad; freeze the leftovers for next week

MON ...
Lady #1 and #2: Cruise
Me: Leftovers cabbage rolls

TUES ...
Me: Tilapia w/romesco sauce (new recipe for the sauce); Spinach Potato Casserole

WED ...
Me: Grilled Italian chicken; and leftover spinach and potato casserole

THURS ...
Cannelloni; anchovy bread; basic salad

FRI ...
Me: Leftover chicken in a wrap sandwich or Pita; fries or onion rings

I have to agree that the gingerbread looks wonderful! I am also not all that into really sweet things these days but I would love one right now and I haven't even had breakfast! Thanks for the beautiful pictures!
Nothing too exciting for me menu-wise this week. I am still enjoying bountiful tomato plants, but I have had to water so much this year! Also, my sunflowers are all 8 - 10 feet tall and one of them is finally opening its flower this morning! They are so much fun to have.
Sat – cheeseburgers, roasty potatoes, veg
Sun – Paula Deen's Layered Mexican Cornbread (heavily modified), with black beans, green onion and green chilies, black olives
Mon – Chicken Scaloppine With Lemon Glaze (Low Fat and Delicious!) with millet and veg
Tue – leftovers from Sunday
Wed – variation on Salmon Pilaf With Green Onions with extra greens and added garlic and Thai chili
Thu – clammy pasta
Fri – Chicken and Artichoke Stroganoff

I've missed a few weeks!  Busy summer "stuff" as well as a garden that won't stop spitting cukes out for pickles. I have way too many bread & butter pickles in the pantry now, but hoping to trade with friends for dills and other yummies.
Pictures look great, as always Mickey - very nice! You guys have posted some great recipes this week - already have several saved - thanks!
Here's our week in a nutshell:
Sunday: Orecchiette With Roasted Broccoli and Walnuts and Watermelon Mango Salad. I suppose leftover cake and ice cream from DS#2 birthday yesterday for dessert.
Monday: Quiche with bacon, cheddar and chives and banana bread.
Tuesday: Japanese Mum's Chicken with roasted potatoes and fresh green beans.
Wednesday: Leftover night!
Thursday: Ravioli with marinara
Friday: DS#2 favorite meal - meatballs with mushroom gravy, noodles and a veggie.
Saturday: Parmesan chicken, mashed potatoes and sweet corn.
