    Greeting from Canada to the Caribbeans!

    I thought it was a good time to come and introduce myself to the readers. I have to admit Caribbean Cuisine is not something I know very much about. In fact being a Canadian from northern Ontario, our growing season is usually limited to app. 4 months, but this year with the heat, it has been extended and there is a tropical feeling in the air.

    I have visited a few islands in the past and was always fascinated with the versatile ingredients that I was unfamiliar with; for me it was a special exotic taste that I wanted to re-create at home.

    This is a fun opportunity where I want learn as much as I can and cook some Caribbean recipes at our house. My goal is to interest you in trying new food and new recipes with us.
    I have been a member here since 2001, but it is my first shot at being a host on a forum; poor Dib.

    I have much to learn and very excited about making new cooking friends on Food.com. Do not hesitate to correct me when I made mistakes or to give me your tricks of the trade about Caribbean Cuisine.

    I love Caribbean cuisine, I just wish half my family wasn't allergic to seafood.
    However, there are a lot of ways we can use the island influence in our meals, besides seafood. icon_smile.gif
