Apple Pie Filling

So, I did manage to salvage enough apples from my yellow delicious tree for some canning this year. . though, most will be used green, dam bugs! bats! Squirrels and birds!


So, ?, how come you can HWB apple pie filing, which is just sugar, apples, a touch of lemon juice and clear jel? is it all the sugar?

I don't understand what you are asking ~ what is HWB?

You can BWB it because the clear gel is a USDA approved Modified Food Starch that is heat permeable enough to use in a BWB. Cornstarch and Tapioca just are that heat permeable.

HWB=Hot Water Bath
BWB=Boiling Water Bath
