    XXXXXXXXXXXXXThe Spice is Nice Challenge

    Curry is a generic term primarily used in Western culture to denote a wide variety of dishes originating in Indian or other Southeast Asian cuisines. The common feature of these dishes is the incorporation of more or less complex combinations of spices / herbs often, but not always including hot chillies. Curry comes in many varieties and is far from one size fits all. Think you don't care for curry? Try a version from a different region! There just might be a blend that fits your palette.

    This challenge will have you exploring the regions of India to discover a curry unique to the two areas. Let's go on a spice journey! icon_smile.gif


    What to Do:
    ~Find two varieties of curry or spice mixes by exploring the ZWT8 All Players Cookbook ~ India. The goal is to match them with their regional influence.
    ~ Post the two recipe numbers & matching regions here. Please briefly explain what makes the recipes good examples of curries from the regions.

    ~Please include your team name and banner.

    I'll play for the Herbaceous Curvaceous Honeys please! This has been fun to research because I know next to nothing about Indian cuisine. I'm actually excited! icon_lol.gif

    Basic Garam Masala (Indian Spice) #482784 by lazyme for the Punjab region. Garam masalas are typical in northern India and in regions such as Punjab. Some common spice mixtures from that region (and in this recipe) are: cardamom seeds, cinnamon, cumin seeds, coriander seeds and black peppercorns.

    Goan Beef Curry #347795 by Paula G for the Goa region. Some spices that were brought over from Portugal into the Goan region are turmeric, cumin, chili powder.Goans grow black peppercorns ,cardamom, cloves, coriander and cinnamon. They also are known for using coconut milk/cream. This recipe includes these spices and coconut milk!

    Now I can't wait to cook!!

    Potato Curry is called Aloo bhaji. Deep Fried Indian Flat Bread called Luchi or Poori, is often served with Dry Potato Curry which is one of the staple side dishes in Bengal. This curry is so versatile that it can be served for breakfast, lunch and dinner.



    West Bengal is a state in the eastern region of India and is the nation's fourth-most populated region with over 91 million people living there.

    Covering a total area of 34,267 sq mi, the state capital is Kolkata (formerly Calcutta). Bengal was divided in 1947 along religious lines into two separate entities: West Bengal – a state of India – and East Bengal, which initially joined the new nation of Pakistan, before becoming part of modern-day Bangladesh in 1971.

    Agriculture is the leading occupation in West Bengal. Rice is the state's principal food crop. Rice, potato, jute, sugarcane and wheat are the top five crops of the state.

    Spices grown in West Bengal are : ginger, tumeric, chilli, large cardamom, coriander, black cumin, fenugreek and fennel.

    This recipe contains chilli, tumeric, cumin and potatoes and is a good example of Bengal cuisine.

    The staple food of Goa along with rice, fish curry made in this style is tangy and spicy! Most goans would agree that their favourite dish is fish curry and rice, where there is a good mix of ingredients in every mouthful.

    Seafood forms an important part of the goan diet as it is high in protein. Goa has a beautiful coastline which yields plentiful supplies of fish all year round. The goans skills in preparing and serving fish are legendary and this is amplified by the variety of fish available.



    Goa is India's smallest state by area and the fourth smallest by population, it has a population of 1.344 million residents. It is located in West India in the region known as the Konkan, and is India's richest state. A native of Goa is called a Goan in English.

    Panaji is the state's capital, while Vasco da Gama is the largest city.

    Tourism is generally focused on the coastal areas of Goa, with decreased tourist activity inland. In 2010, there were more than two million tourists reported to have visited Goa, about 1.2 million of whom were from abroad

    Rice with fish curry (Xit kodi in Konkani) is the staple diet in Goa. Goan cuisine is famous for its rich variety of fish dishes cooked with elaborate recipes.

    Coconut and coconut oil are widely used in Goan cooking along with chili peppers, spices and vinegar giving the food a unique flavour.

    Spices brought over from Portugal to the Goan region are: turmeric, cumin, chili powder. Goans also grow black peppercorns ,cardamom, cloves, coriander and cinnamon.

    This recipe contains tumeric, coriander, chili powder, coconut cream and fish. I believe this is a good example of Goan cuisine.

    Muglai or .Mughlai food is characterized by rich and creamy curry which have a distinct aroma and taste of ground and whole spices. Yogurt, onions and often almonds are used for this dishes, which make the sauce creamy and very rich.
    These curry varieties are immensely popular all over India especially in North India from Punjabi cuisine.
    The names of the Mughlai dishes are quite often Persian, the official language of the Mughal court!

    Enjoy this best with Indian bread as naan!

    Coconut is one of the main ingredients in Southern Indian Curries.In this region, the curry is often flavored with spices like clove, cinnamon, nutmeg, anise, and bay leaf. In the mentioned recipe Star anise is really the star between the mentioned spices. The other spices are included in the garam masala.

    These curries are mainly eaten with rice!

    Tandoori Spice Blend #466988 is more suited to the northern regions and areas of India, close to Pakistan and Afghan cooking. Typically this is used in tandoori chicken, which involves a yogurt marinade with spices sprinkled on and roasted in a tandoor dish at high heat!

    Garam Masala Ala Madhur Jaffrey #395197 is also more suited to the Northern regions of Indian, extending to the southern Asian areas. Garam Masala literally means
    'Hot Mixture'.

    I have chosen Chicken Kundou (Kashmiri Style Chicken) #423599, by Chocolatl.

    With her use of almonds and cashews, ginger, garlic and cayenne pepper, Chocolatl has given us a recipe typical of the Kashmir area. There is a predominance of garlic, onion and shallots in Kashmiri cuisine, also present in this recipe, and yoghurt also plays a big part. althopugh Chocolatl has chosen to use buttermilk. Kashmiri cuisine has evolved over hundreds of years and is highly influenced by the food of the Kashmiri Buddhists and Pandits, the Hindu community of the valley. Apart from this, it is also strongly influenced by the cuisines of Central Asia, Persia and the North India Plains.






    My second choice is Murgh Makhani (Indian Butter Chicken) #482126 by Lavender Lynn.

    The origins of butter chicken can be traced back to a Punjab region. Butter chicken is regarded to have been first introduced by Kundan Lal Gujral in Peshawar in undivided India.
    Though various versions exists for the recipe, typically dressed chicken (with or without bones) is marinated overnight in a yogurt and spice mixture usually including garam masala, ginger, garlic paste, lemon or lime, pepper, coriander, cumin, turmeric and chili.
    The sauce, is made by heating and mixing butter, tomato puree, and various spices, often including cumin, cloves, cinnamon, coriander, pepper, fenugreek and fresh cream
    Of all the spices added to the dish it is dried fenugreek leaves (Urdu/Hindi: Qasuri Methi) that makes the greatest contribution to the characteristic flavour of the dish.

    With Lynns use of ginger, garlic , garam masala, chilli powder and especially fenugreek leaves, I feel that this is a fine example of an Indian classic recipe.
