Since ancient times honey, chocolate and cinnamon have been treasured and used by the people of Mexico. The Aztecs used them as both currency and food, as did the Mayas before them. The Spaniards took chocolate back to Spain from the Aztecs and a special chocolate drink became a firm favorite of the Spanish king. Nuts, seeds, and honey were added to give it a rich flavor.

Flan is probably the best-known Mexican dessert and is actually a legacy of the Spanish colonial era. Many Mexican desserts emerged after years of colonial rule, when the Spanish introduced pastry-making skills and ingredients such as hard wheat flour, eggs, and milk. These ingredients were combined with the local fruits and resulted in some delicious cakes. A short French occupation also introduced crepes to the region and a taste for fine-textured yeast breads.

To celebrate the contributions of the Mayans and Aztecs to desserts of the Southwest 3 ingredients are being highlighted:

Honey
Chocolate
Vanilla

Thanks Susie I have a back-up recipe just in case, which has actual chocolate, but I'd prefer to make my first choice, which has vanilla and cocoa powder (DH will be more likely to eat it )
