I've been making pitchers of this, Iced Coffee Latte with half the milk and plain instead of chocolate.
I've also been making lots of smoothies, with frozen fruit instead of ice, I don't like diluting the mix. I've mainly been making them with either milk kefir or Coconut Milk Kefir , to get some more health benefit out of them.
The cold soups are a staple. I've been making the Lithuanian cold beet soup, this is a favorite from childhood. I've also been making Rugusis Pienas - Lithuanian Clabbered Milk , also something I've liked since childhood. I do make boiled potatoes to go with it. Having fresh herbs and greens from the garden really ups the flavor quotient!
I am experimenting with a cold spinach soup. Hopefully will have something to post.
Otherwise, I hate to say it but I've been eating out more. I just cannot face cooking much.

Who needs food when you can sip (swill, inhale, overindulge) on ratherbeswimmin's Watermelon Daiquiri ??? Our Mississippi watermelons are at their peak, and we eat (or drink) them any way we can, often!
