    Happy summer/winter friends!!!! Things were relatively calm this last week here. Most things were made according to plan. This coming week is 4th of July Holiday here in the states and also my middle DS's 19th birthday!! So lots of cooking I think.

    Here's my menu. Share yours!!

    Saturday - Hot Pastrami Sandwiches, some kind of refreshing salad...maybe watermelon

    Sunday - DS's Bday!!! - 20 Minute Creamy Pesto Chicken and Bow Ties, Kittencal's Jalape๑o Cheddar Cheese Bread, Grilled Asparagus, Kona Banana Cream Pie

    Monday - Ravioli With Sage Butter Sauce, bread and salad

    Tuesday - Chocolate Chicken Mole with rice and corn

    Wednesday - not sure but I have hot dogs and hamburgers in freezer...will decide when I know what we're doing.

    Thursday - Bunco night!!!! Shredded Pork Chimichangas for the menfolk

    Friday - Baked pasta with salad

    Love the Birthday Dinner C. An odd week for me, but got most accomplished, but battling a cold which hasn't decided to attack me or not icon_rolleyes.gif

    This week will be lots of cooking. Me and 6 friends throwing a party for 24 for a good friend who just accepted a job in CA and is moving. All 6 of us are cooking tomorrow and many pitched in cost wise, so it worked out well. And, it isn't at my house, his associations Club House. Then the fourth. 6 of us again help a friend throw his party at his farm and I will be smoking chicken and salmon; and 3 of us cooking and preparing Wed am as well. So between both parties, I will be busy. Then work too.

    But, I hope everyone has a fantastic Fourth of July week - and for those melting in the heat ... try to stay cool and drink plenty of water!

    I have a couple of recipes from here to make this week, but f.com is not cooperating. I can't look up recipes, it just keeps spinning YIKES!

    California Party with Friends:
    Appies - Tri Tip on skewers w/spic dip, proscuitto and fig pizza cut in wedges, dates stuffed with almonds and wrapped in bacon
    Salads - Greens w/artichokes, mushrooms and a white wine apricot vinaigrette, wine country rice and grape salad, sourdough bread
    Dinner - Cioppino, roast chicken and olives
    Dessert and Drinks - California beer, plenty of wine, blueberry mojitos, apple raisin tarts, toasted almond bark for everyone to take home

    Bread: white
    Me: Grilled salmon; leftover slaw from Fri; corn on the cob
    ----------
    MON ...
    Lady #1 and #2: Making them 2 meals each - 1 for today and another for the 4th. I'll just drop it off and they just heat up what they want
    Dinner 1 - BBQ pork tenderloins; broccoli slaw; herb potato salad
    Dinner 2 - Coffee brisket w/onions (crock pot); bread; watermelon; carrot raisin salad
    Me: Leftover brisket (from Fri) sandwiches w/BBQ sauce; sweet potato fries and watermelon

    TUES ...
    I will be smoking Smoked Citrus Chicken 6 chickens; and, Smoked Salmon 2 whole salmons. For a 4th party
    Dinner: My 3 friends will be coming over for dinner to prepare the remaining food for Wednesdays Party.
    I picked up 4 lg cheese pizzas from my grocer (2/$5) and we will grill them and make them our own with different toppings; one guy is bringing a salad

    HAPPY FOURTH OF JULY!

    Corn on the Cob with Four Different Flavored Toppings (my recipe, another site) 10 dozen ears; Bloody Mary Steak with a Blue Cheese Sauce (a variation of what is posted here) 10 skirt steaks; Vegetable Stuffed Zucchini (again, my recipe, another site) 40 squash (80 halves)

    THURS ...
    Lady #3: Cod with a Mediterranean tomato sauce; couscous with pine nuts; sauteed kale; olive oil cake
    Me: The remaining brisket made into Shepherds pie or a pot pie; salad
    ----------
    FRI ...
    Lady #1 and #2: TBD, their card game night; thinking a NY Deli Night
    Me: Out with friends or work, don't know yet
    -------------------------------------------------------------------
    Breakfast: yogurt, cottage cheese or fruit
    Lunch: leftovers or soup if any
    And ... don't forget to go through your pantry, fridge and freezer, there is a meal waiting to be made

    WOW and why is it all the dishes I YEARN are no on my food dietary list...OH well, not a problem as there is always SOOOOOOOOOOOOOOOOOOOOOOOOOOO much more for me to focus on that I can have!

    WAIT till everything is put together this week...by Tuesday! WHOO HOO!

    Well, I finally found out why I was getting debilitating ear aches...the roots of wisdom teeth, that never actually developed teeth, were severely infected. I never knew you could have roots and no teeth. Huh. And I just went in for a check up. Now I'm on antibiotics and I get to have the roots removed in the next couple weeks.

    Here's my menu for this week...
    Saturday: turkey burger's with bacon and cheddar mixed in

    Sunday: Crock pot honey sesame chicken

    Monday: hubby making spaghetti for his mom and her boyfriend, boyfriend has cancer, he and hubby reconciled

    Tuesday: homemade fish sandwiches

    Wednesday: pork chops in crock pot

    Thursday: Korean beef

    Friday: something like this...chicken stew

    So sorry to hear about the earaches and roots and all. At least you know the issue and can get it taken care of!!! I like your menu, especially to korean beef!

    I also like that Korean beef recipe -- so simple!

    It is HOT HOT HOT here, but I am still stubbornly trying to get some yard work done. Luckily a lot of what needs to be done is in shade at some point in the day. Last night it was still 93 degrees at 9 pm! I actually enjoyed grocery shopping today because it was so cool in there!

    Sat โ€“ garlic shrimp with asparagus with various leftover noodles from this past week

    Sun โ€“ BBQ'd Cornmeal Crust Pizza with Artichokes (could not possibly do pizza in the house right now)

    Mon โ€“ Salmone Alla Toscana over rice

    Tue โ€“ Spicy Mulligatawny Soup ( Chicken ) with tortillas (I will make it with only minimal liquid so it is more of a sandwich filling than a soup so it won't be overly hot)

    Wed โ€“ burgers for the 4th with grilled โ€œfriesโ€ (will microwave potatoes first) and veg

    Thu โ€“ Won't You Be My Gyro Chicken Panini (in leftover tortillas) with veg

    Fri โ€“ Spaghettini With Checca Sauce

    It's supposed to be in the 90's all week, so the oven is off. Sure miss my baking, but that's how it has to be. icon_confused.gif

    Sunday: Home from a out of town family wedding. Such a fun time!!

    Monday: Care package sent home from the after wedding party on Sunday. Broasted chicken and potatoes, fruit salad and maybe some broccoli on the side?

    Tuesday: Our town's Independence Day celebration, so we'll be at the parade and then the fairgrounds for fireworks. We'll bring a small picnic, but all the food wagons will be set up, so I'm sure dinner will include some fair food as well! icon_biggrin.gif

    Wednesday: The boys agreed that the 4th of July dinner should be hotdogs on the grill. Probably baked beans, carrot sticks and red, white and blue jello squares.

    Thursday: Sweet and Spicy stirfry I found in a Woman's Day magazine. I'll let you know how it turns out.

    Friday: Steak Sandwiches - Pioneer Woman. We loved this the last time we made it, so we'll try it again. Probably use up the rest of the fruit salad with it.

    Saturday: Pierogies and chicken legs as requested per DS #3. His favorite dinner.

    Ok, a little late but here I go.

    Saturday was hamburger helper (DH loves this stuff)

    Sunday was KFC

    Monday: Sticky Pork Chops with rice and veggie

    Tuesday: something with the leftover shredded pork in the fridge.

    Wednesday: grilling for the 4th, not sure what yet with macaroni salad and fruit salad

    Thursday: pasta night

    Friday: Korean Roast Chicken Thighs with riceand veggies
