    Menu for Week of June 23 thru June 29, 2012

    Hi menu friends!!!! How is everyone handling summer? (And winter for you Mickey!!) Not too hot for us yet. I'm still getting away with having the oven on, but not much longer!
    My eldest DS had his professional debut last night. He caught a great game!! So proud. Ok, I'll stop bragging! icon_redface.gif
    My DH's work is hit and miss still. So lots of stretching meals. I even made a few meatless meals. Including a black bean burger. I waiting till all the menfolk were part way thru before I asked them what was different. They hadn't even noticed!!!

    Here's my menu. Share yours!!

    Saturday - My Mother's Day present. My hubby and 2 sons are taking me to a murder mystery dinner! Love it!!!

    Sunday - Shredded Pork Tortas using leftover pork from tonite's roast. With Watermelon Mango Salad

    Monday - Niku Jaga (Japanese Beef Stew in the Crock Pot) using a small roast from freezer. With rice and vegies.

    Tuesday - Banh Mi (Asian Sandwich) using leftover pork roast, sides to be determed

    Wednesday - Orange Cashew Chicken (got a great price on some cashews!) with rice and salad

    Thursday - Amazing and Fast Pressure Cooker Short Ribs, with mashed potatoes and Panzanella Salad With Bacon, Tomato and Basil

    Friday - grilled-bacon-wrapped-meatloaf-stuffed-with-beer-cheese from Serious Eats, with potatoes and vegies.

    Fantastic dishes by both you guys. This week is pretty basic here, and I'm trying to use my items I have on hand first. C - you can brag all you want! A bit rainy this week in FL, but don't let the weather man fool you ... Yes, we got rain, but just south, east and north of us got dumped on - WE have NOT. We still need a lot more. Last week, a lot of unexpected things came up, but managed to make all my meals, just in different order icon_smile.gif

    No soup or bread this week (enough in the freezer)
    Dinner: Leftovers (Caribbean pork from Fri) maybe a stir fry or fried rice

    Lady #1 and #2: Caribbean Pork Tenderloin; jasmine orange rice; sauteed green beans; fresh fruit
    Me: Something Asian w/salmon; cold peanut salad; fruit - not sure yet

    TUES ...
    8 layer meatloaf; glazed carrots; iceberg wedge w/thousand island (homemade)
    ----------
    WED ...
    Lady #1 and #2 w/guests: Roasted artichoke and olive crostini; salisbury steak w/mushrooms; mashed cauliflower and potatoes; layered salad (recipes to be determined)
    Me: Meatloaf sandwich; chips or fries; and of course pickles
    ----------
    THURS ...
    Lady #3: Soy glazed salmon; cold peanut salad; sauteed bok choy; orange pound cake
    Me: Out - sushi or Mexican
    ----------
    FRI ...
    Lady #1 and #2: An event or b'day party in the neighborhood/Clubhouse
    Me: Work, out with friends, or I'll invite my g/f over for dinner
    Maybe, crock pot brisket; w/veggies; egg noodles; and a new salad or slaw. I'll decide later this week.

    Breakfast: cottage cheese, yogurt or fruit
    Lunch: soup or leftovers
    And ... don't forget to clean out your pantry, fridge and freezer ... there is a meal waiting to be made

    This is a bit different, 8 layers. 1 Meat, 2 sauteed spinach, mushrooms and onions, 3 cheese, 4 marinara, 5 cheese, 6 more spinach, mushrooms and onions, 7 meat, and 8 a potato crust. It's pretty good and really not difficult. So, I am not sure how the sandwich will work.

    I LOVE A COLD meatloaf sandwich. I may have to make this an open face and warm. Maybe with a little extra sauce on top. Not sure. Although the spinach and mushrooms would be really nice warmed up in a ciabatta or french bread.

    Or Chef ShapeWeaver did a grilled meatloaf sandwich, that might work too

    But yes, I make meatloaf ... just for meatloaf sandwiches!!

    This week was tweaked by a 2 day power outage, so that changes next week a bit, as I had to borrow some recipes.

    Sunday: Grilled Honey Garlic Pork Chops, roasted red potatoes (from DH's garden!) and corn on the cob.

    Monday: My version of Ham and Sharp Cheddar Biscuits, carrot sticks, and Jello Recipe No. 2 of 52: Jello Fresh Fruit Parfaits.

    Tuesday: BBQ pork sandwiches, baked beans, home canned peaches.

    Wednesday: Normally my leftover night, but the fridge was emptied with the power outage, so we'll barely HAVE leftovers! icon_lol.gif So, it'll be The Very Best Salisbury Steak, mashed potatoes, and corn.

    Thursday: Buffalo Chicken Balls (the boys' favorite!), cornbread and a veggie to be named later. icon_razz.gif

    Friday and Saturday: Off to a family wedding - YAHOO!!!

    Pretty simple menu this week.

    Saturday: Roast beef sandwiches from a roast I made overnight.

    Sunday: Crock pot chicken with black beans and cream cheese and tortilla chips...This is one of my husbands favorite dinners.

    Monday: Grammy's meatballs and mashed potatoes

    Tuesday: Taco salad with tortilla chips, ground pork, cheese, lettuce, sour cream, and refried beans

    Wednesday: Baked ziti...my meatless meal this week

    Thursday: Pork chops and rice

    Friday: Turkey burgers

    Great menu! Crock Pot Chicken W/ Black Beans and Cream Cheese...yum! is one of my favorites too!

    Hi,

    I am back from Colorado (actually have been for several days). Fortunately we had some good stuff in the freezer for when there wasn't time / motivation for much cooking right after that. Including leftover homemade (with our Taiwanese student) Chinese dumpligs, which we had with the last of the wonderful peas from our garden. Our neighbors ate most of them, which I can live with because they were taking excellent care of our kitties while we were away.

    This weekend my menu has changed before I even posted it because I still haven't had a chance to shop -- we are trying to tame the jungle that has appeared where our yard used to be. The good news is that the garden is doing well. I now have a 4th volunteer tomato plant, and the tomatoes that I actually planted are now almost as tall as I am!

    Charmie - congrats on your son's accomplishment! As others have said, brag all you want! icon_smile.gif

    So here goes:
    Sat – made something up with sopes, poached eggs, queso fresco, spinach, tomato, and black beans

    Sun – to inlaws for pool and cookout

    Mon – Honey Ginger Grilled Salmon with veg and millet

    Tue – Chicken Chasseur (with bread)

    Wed – Mexican Inspired No-Mayo Macaroni and Cheese Salad

    Thu – Greek-Style Turkey Burgers with grits and veg

    Fri – Avocado Basil Pasta --- my garden basil is doing very well too
