Anyone ever made homemade sriracha sauce? What did you put in it?

My husband makes a batch every fall - a couple of quarts, I think. Enough to last until the next fall, anyway. I buy a basket of red chilies and a mess of garlic - I think all he adds to that is a bit of vinegar, salt, and maybe some sugar.

In season, I get a peck of peppers (ha!) for about $5, I think, plus another couple of bucks for the garlic. That'll make at least two (maybe 3) quart jars of sauce. Actually, now that I think about it, it was at least 3 quarts - he gave one to his mother, and I know we had two full jars in the fridge for a while.
