Pepperpot is a user friendly dish. You can substitute pork, beef, chicken or shrimp because the native population included what ever was available that day, and in the tradition of this dish it is appropriate for you to do the same. You can also experiment by adding Caribbean spices or non-indigenous spices like clove, thyme, or garlic. Coconut adds a nice twist to this dish as well.

I remember my Dad making pepperpot when he was leaning to cook-it was one of the very, very, very few dishes he did well

Yay Dad! I love these types of dishes. I've narrowed it down to 3. No guarantee I'll get all 3 made, tho! Although 1 is beef, 1 chicken & 1 pork so actually it's quite possible especially since afterschool activities are winding down. oh yeah!

I made Sharon's pepperpot yesterday.... OMG, it was SOOO delicious!! I'll review later. Since the weather is still crappy & cool, I will make Dancer^'s tonight.
