    Need HELP with Roast Ribs !

    i want to cook roasted ribs with a recipe which i developed in my imagination and i wanted some help and advice and guideline so i wont look bad infront of my guests.
    here is the recipe :
    marinate ribs in thyme garlic and oregano for 24 hrs and 10 minutes in kiwi for tenderizing
    1- have the outer of the ribs brown in a pan of caramelized butter and olive oil with rosemary .
    2- wrap up the ribs in foil and slow cook for 5 hours in over
    3- serve with red wine gravy and rosemary

    here is what i need to know
    you think this will turn out good ? if not what are you suggestions
    you have any side dish in mind?
    you have any advice for improvement ?

    You are cooking beef ribs? Why the 24 hours and 10 minutes marinating time? What do you think are the benefits of the additional ten minutes? I have not used kiwi but wonder if it might not overtenderize the meat - you don't want mush.

    This forum is for cooking in a slow cooker but I imagine that cooking at a low temperature in the oven would be ok. Wrapping in foil would keep it from browning but you are browning prior to putting in the oven. The foil should keep it from drying out.

    the kiwi i have used on steak (sirloin) and works amazing adds a nice taste and tenderizes much better than artificial .
    im not experienced with ribs so i dont know if needs to be marinated .

    i thought browning it on the grill would give it a nice crispy buttery taste rather than the over but for cooking it use the slow oven cooking in foil so it kinda cooks in its own juice and the bones .

    what do you think would be a good cooking time and temp for medium-welldone considering the pre-browning in butter ? (4 ribs about 12 lbs i guess )

    what do you think should be used for flavoring it other than thyme rosemary and garlic ?

    If you want ribs cooked to medium-well done, you'll need to select either beef ribs cut from a rib roast or baby back short ribs. All other types of ribs will be way too tough at medium well doneness. Season the ribs with a BBQ rub or one of the McCormic Grill Mate seasonings, brown, and wrap in foil. Bake at 240F for 4 hours and check the meat temperature for the degree doneness you want and check for tenderness.

    Most ribs (beef short ribs, pork spare ribs and ppork baby backs too) are cooked until the internal temperature is 180 to 200 F because the meat is very tough at lower temperatures. The tendency is to over cook them when using foil as the process is braising more than roasting.
