    Shredded Beef for a Crowd

    I am making shredded beef sandwiches for my son's graduation party. The recipe I usually use is one can of beef broth and a package of onion soup mix per each 3-5 lb roast, cooked in a slow cooker for several hours. Because I am cooking enough for 150 people, I am making 12 roasts, and need to cook these in large roaster ovens instead of a crock pot.

    Anyone ever done this before? I am wondering what temperature to set the ovens to, and how long to cook them.

    I'm afraid I haven't used roaster ovens for more than warmers, but can offer some other sites and a recipe or two

    This recipe is for a 7 to 8 lb roast with veggies and liquids. The directions below might be useful for you.

    1) Preheat roaster oven to 300 degrees F.
    2) Place roast in bottom of Cooking Pan. Place vegetables around sides of roast. Add salt, pepper and broth.
    3) Cover; cook at 300 degrees F 3 to 4 hours or until tender.
    4) Source: GE Roaster Oven Manual (for 17 qt roaster oven)

    I will opine that slow cooking temperatures range from 200 to 300F depending on the device. I smoke meats at 240 to 300F. My crock pot cooker runs about 240F on high.
