    Cannig went wrong. What to do now?

    I canned my asparagus Sat. When I took them out of the pressure cooker 1/4 to 1/2 the liquid was gone from most jars. All jars sealed. Will it bel ok? If not would it be ok to open each jar and freeze the contents?

    Should liquid lost during processing be replaced?

    No. Loss of liquid does not cause food to spoil, though the food above the liquid may darken. If, however, the loss is excessive (for example, if at least half of the liquid is lost), refrigerate the jar(s) and use within 2 to 3 days.

    That occurred w/my pineapple the other night. I'm guessing that perhaps the pineapple absorbed some of it, but the seals are tight.

    I'm THRILLED with all the stuff that CAN be CANNED!

    My pantry is stocked, nearly to the gills, lol

    I am just so....satisfied and really, had I not been able to leave my house for, easily, a year, we'd be just fine! icon_smile.gif

    I have been stocking up on dry milk/eggs, etc.. the prices in the stores are scaring me!

    I mean, milk is $4./gal, eggs up to $1.99/dozen if you buy 'cheap' brand... phew! Milk was on sale last wk at Kroger for $1/ 1/2 gal cartons.. I actually considered freezing some! (( my mom used to do that waay back in the late 70's) .. but, then, I remembered how one fell out from the top freezer and broke my toe very badly! lol At the USMC hospital, they all laughed hysterically..................

    I freeze milk and buttermilk. I don't use enough and half will spoil so into the freezer. Works great for cooking.
