Gluten-free Anzac biscuits

Anzac Day is April 25th in Australia and this year, I set out to bake a gluten-free version of an Anzac biscuit. (that's biscuit....like a cookie in US)

Traditionally Anzac biscuits are made with oats, flour, butter, sugar, brown sugar and bicarb soda. Oats are not considered to be suitable for a gluten-free diet in Australia and I dont include them in my diet.

I've made a few versions now (as well as the regular non-gluten-free Anzac biscuits) and finally today managed one that I was happy with!! I haven't had an Anzac biscuit since starting on my gluten-free diet ....over 8 years now.

On Anzac Day, my youngest daughter Holly and I made Anzac biscuits together. I also tried to bake my first batch of gf biscuits
