The trees are budding. The flowers blooming and with that we have wonderful delicious greens poking through the soil. Greens have many health benefits. They are low in calories, carbohydrates and are packed with nutrients. Come join us to celebrate spring and add some green to your meal plan.
Arugula
Arugula is an aromatic salad green. It is also known as rocket, roquette, rugula and rucola. It can be planted in early spring. The tender leaves can be picked and used in a variety of ways.

Bok Choy
Bok Choy has been cultivated for centuries. It is an excellent source of Vitamin A, Vitamin C and calcium.

Collard Greens
Collards are good sources of vitamin C and soluble fiber, and contain multiple nutrients with potent anticancer properties.

Dandelion Greens
Dandelion greens are especially rich in vitamins A, C and K and a good source of fiber, calcium, potassium, iron and manganese. They are also said to be capable of cleansing the liver, lowering blood pressure, reducing water retention and performing as a mild diuretic.

Me too! I am almost gonna roll up to NYC. Wow, off to look for some green recipes!! Hi sweeties! We have been farming in the photo forum, if you all every want to come visit. I just cleaned all the manure out, and put fresh straw down so you don't' get dirty.

Just happened to pick fresh greens from the garden, so I went ahead and wound this up, the dressing is so good! Very simple, but so fresh.....I don't know why, but I could easily take sips of it

Thank you for asking....yes things have finally calmed down. We are now down in CA, Mom is doing ok in ID, DH is doing great after his knee replacement 8 weeks ago, my DD is doing as well as expected after her fourth back surgery and our company here in CA are gone and hopefully we will be back to our regular routine!  It is soooo nice to be able to get fresh produce here in California for a more reasonable price and having it so much fresher! I hope everything is fine with you and the rest! Oh yes, is cabbage and spinach is also considered a green for this Spring forum?

Boy Mama Surf, sounds like you have been running. Glad to see you back. If it's green it counts. Don't forget herbs are also included; i.e., basil, parsley, fresh oregano, sage, etc. The list is endless. I only listed a few ideas on the front page to get is started.
Anybody up for a little game? How about a green veggie/herb alphabet game?
