This Easy and Tasty Strawberry Shortcake looks absolutly yummy. I'm seeking to get the same dense and not two sweet version using a gluten free flour. Can anyone make suggestion what type to use and if any other conversions are needed?[Easy and Tasty Strawberry Shortcake][/recipe]

This recipe is gluten free, uses milk, but i am sure you could use cream instead - it might be a model for you to follow, Shortcake (Gluten Free, With Strawberry, Etc)

Also, you might want to check out the gluten free forum - folks there are experts in dealing with changes that need to be made when you have to avoid gluten. http://www.food.com/bb/viewforum.zsp?f=31
