    I have a few recipes for things that keep well in the fridge for spring & summer but need more. What are your favorite fridge foods?

    I'm basically a 'scratch' cook, but there are two commercial products that I absolutely love. Both are always in my fridge during the summer.

    The first is the Kajun Krab Dip from Fresh Market. If there's a Fresh Market in your area, I think you will love it.

    The other is a marinade called Hendrickson's. It's made in Missouri and is available through the Schnuck's grocery chain. Or you can buy it online. I pour it over a combo of garden-fresh tomatoes, cucumbers and red onions. It is to die for!

    I so appreciate the replies. I think I might have worded my request wrong. I am looking more for recipes that keep several days in the fridge, I have a veggie salad, marinated shrimp & cucumber dish but would love to have several more.

    I also like a Japanese potato salad with sesame, green beans, and carrots. Cooked chicken can be added to make it into a complete meal. I have not posted this to the DB, but will if anyone is interested.

    Yummy doesn't even begin to describe it, amber. icon_smile.gif I'm sure there's a recipe somewhere out there that's as good as Hendrickson's, but why bother searching when there are so many other things you can't buy??

    To the original poster -- I think everyone understood the question. You stated it very well. And, as far as I can tell, everything suggested so far will keep for several days at least.

    Chick Pea Salad
    I change it up a bit, but it still a very good salad

    Asparagus, Beans & Arugula Salad With Mustard Vinaigrette
    This will last 2-3 days very well

    Warm Sweet Potato Salad
    I prefer it warm, but it is just as well cold

    Warm Chicken and Barley Salad
    The chicken does not have to be warm

    Any large shells stuffed with your favorite salad stay very good in the refrigerator.

    Sarasota's Summer Chilled Vineyard Rice Salad
    Is a great salad which holds up very well

    Sweet and Spicy Grilled Pork Tenderloin
    I love this warm, but it is fantastic cold

    Sarasota's Sesame Grilled Chicken Thighs
    These are great warm or cold.
    I also do these with breasts and then thin slice them when I am ready to eat. They can be on sandwiches, salads, or just eaten as is. Also great on drumsticks. Great snack food.

    I won't list a recipe here, but a basic corn and black bean salad is wonderful and holds up for quite a few days.

    Shrimp. NO recipe, just boil in Old Bay and Beer with a chopped small onion. Cool and refrigerate for up to 3 days. Great snack food. Boil right in the shell.
    Can be used in shrimp salad, wraps, quesadillas.

    Cold chicken plain and roasted. Great to keep. Perfect to add to a wrap or a quesadilla which can be done in just seconds. I just love it as is, but I love to keep in on hand.

    I love the deviled eggs, already mentioned
    I think egg salad also mentioned is great.
    Same with lunch meats and cheeses. Really good to keep on hand.

    Spinach dip, bread, crackers, even the rotel which can be a quick 3 minutes in the micro. Already mixed up. Great snack food.
    A minted pea dip or hummus or white bean dip; all stay for 3-4 days and great snack food. Having pitas and crackers on hand makes it easy to just grab

    Also a Bloody Mary marinated grilled skirt steak is fantastic in sandwiches or on salads.
    I mix Bloody mary pre made mix, vodka and oregano. Marinate the steak 4-8 hrs and grill, inside or out. Grill and thin slice. It isn't a main dish, but works wonderful for quick sandwiches, added to pasta salad or just added to a tortilla with some lettuce and cheese for a fantastic wrap.

    Then of course meatloaf which I love, cold or warm, sandwiches or not, I love it.

    I think someone did mention tortellini salad which is excellent.

    Quiche, I make a crustless quiche which is so easy and just delish. It is good warm, room temp or cold. Just slice and enjoy. And the fillings are wide open. I prefer a basic bacon, cheddar and onion; or a ham and swiss. But use your imagination. Last 3-4 days easily.

    Also, an artichoke dip or spinach dip is great spread on a tortilla, add chopped ham or chicken and roll up for a quick bite. You can make these ahead too and roll. Wrap in saran and then slice for quick bites or cut in half for a full meal.

    And don't forget soup. I make it year round. Tomato, Potato, bean, cabbage, chicken noodle, etc. A quick 2 minute nuke and lunch. Lasts for days.
