    make cobbler now - bake 3 hours later?

    Hello all!

    I am having a dinner party tonight, and I would like to make this cobbler: Peach Cobbler up to step 5 (i.e. everything but baking it), then let it sit on the counter for 2 to 3 hours until I am ready to bake it (just as we sit down to eat dinner). Do you think this will be OK, or do you think the baking powder will run out of "power" from sitting in the batter for so long without baking?

    I basically just want to have it ready to go so I don't have to make the whole thing while I am dealing with guests/ other dishes icon_wink.gif

    Why not make the batter except for the baking powder then stir in the baking powder just before you are ready to put into the oven. you could have the peaches with spices and sugar mixed together in another bowl. use a slotted spoon to remove as they will have exuded some juices.

    You'd still have to put it together in the baking dish but it should just take a couple of minutes to get it together - while the oven is preheating anyway.
