    Semi-Experienced "Sous Chef" Poster
    Just searching for easy but,attractive appetizers to make for my wedding reception.I needs some things to make ahead and freeze,this is going to be an outdoor reception,with a large tent and huge building garage.I' m trying to figure out to increase some recipes to make for around 100 to 150 people.I know it would be easier to cater,but,I want to make myself.
    I would love some ideas and recipes or suggestions.
    I work with High school foreign exchange students and place them in families,so I was thinking of a variety of international foods,appetizers,etc. This will not be a sit down venue,it is very casual.

    While we have a recipe converter that will help adjust recipes for a different quantity, it's not always easy to do, especially when you start getting into much larger quantities, as for 25, 50, 100 or more. Spices and other seasonings are often tricky.

    I know there are appetizer recipes, but I am not sure how many might be international. However the quantities given might help you figure out how to adapt other recipes to get an adequate amount.

    150 people is quite a bit - do you have that much freezer space? The most I've cooked for is 45 and i found that quite challenging!

    I had a theme party (have MANY lol) where I did mini bite portions or all world cuisines and I incorporated it with mini bite portions of dishes served at Epcot in Disneyland...

    When's the wedding and what type of weather (in general) do you think you might have?

    Are you looking for hot or cold? Only appetizer/finger foods or amin and desserts too?

    What equipment do you have? chafing dishes? or not, will be renting? Crockpot , warmer plates?

    Based on this info will also help me tailor what I can help you with!


    LOVE planning parties!

    Over what period of time will you be serving food as it is not only the serving but how well (or not) some foods can stay out for how long with spoiling in one way or another too!

    General age group of who you will be catering for and is there any dietary needs of anyone?

    MOST importantly....WHAT is the budget?

    Are you thinking platters of things?

    BIG thanks! Have HEAPS more ideas, but am waiting for the original poster to reply as there is no use ME going off on a tangent and it is not what THEY are looking for or looking to do!

    A friend of mine (from here) sent me this via email and thought it was PERFECT too!

    might have to consider doing that for a future party too!

    The wedding is June 9th.It is very casual,but?I don't want tacky.I want simple,and very tasty.I want to make,because of budget,plus? I like to cook.It will be around 125 people.All very laid back.But?like I said, I want something simple.Hope to have some great suggestions..The other half says? popcorn,beer.Sorry? not happening.he says,the softball buddies,will be happy with this.

    are ANY of the suggestions above something you like? Or am I on the wrong diffucult to plan something if one does not have some sort of budget or know what kinds of equipement one has...or if you want only finger foods, ...

    Host Mom, I used the recipe sifter to find appetizer recipes that are OAMC - designed for freezing. This is what I found,oamc-freezer-make-ahead . Just on the first page there were empanadas, pizza bites and potstickers. The spinach balls could be Mediterranean. Anyway, if people classified their recipes correctly, there should be a lot of make ahead and freeze options here.
