    Time to join in on our monthly tag game in the Diabetic Forum while we celebrate "National Tomato Month". The lovely, bright, tomato is packed full of wonderful nutrients, vitamins, and can give you a healthy, good feeling, just by eating one. Come enjoy the conversation, the friendships, the fun, and of course, get to know your tomato, up close and personal.


    The perfect red ripe tomato bursting with juices and rich flavor is appetizing and impacts great taste to food.

    Studies show that daily consumption of tomatoes fulfills the body’s daily requirement of minerals and vitamins and therefore exerts a protective effect on it. Daily consumption of tomatoes will help alleviate diabetes and reduces the oxidation, thus exerting protective effect against cardiovascular diseases.

    Tomatoes are low in carbohydrates and useful for diabetics who want to lose weight. They also control the amount of sugar in a diabetic person urine effectively.

    Besides that it also prevent urinary tract infection, reduces hypertension and improves vision. Vitamin K which is abundant in tomatoes is essential in blood clotting and controls bleeding.

    So go ahead, eat up and enjoy every last bite!

    Regarding eating a fresh tomato:

    For a food to be able to raise your blood sugar levels, it needs to contain enough carbohydrates per serving. If you enjoy tomatoes, fresh tomatoes, consumed in moderation, are not a problem for managing your blood sugar levels. For example, 1 cup of cherry tomatoes contain 5.8 g of carbohydrates and 1.8 g of fiber, which is the equivalent of 4 g of net carbs, while 1 medium whole tomato has 4.8 g of carbohydrates and 1.5 g of fiber, or the equivalent of 3.3 g of net carbs. Net carbs correspond to the total grams of carbohydrates minus the dietary fiber and give you a more accurate picture of how foods influence your blood sugar levels. Use net carbs when tracking your carb intake and assessing the influence of your diet over your blood sugar levels.

    Count me in I am now away from all commotion (hopefully) for a while. After my father passing, DH having total knee replacement and my DD having another back surgery things have calmed down so I can get back to cooking...and I love tomatoes!

    We don't yet get anything but watery tomatoes from Spain, Israel or Dutch greenhouses, but as I do better with boiled tomatoes anyway, there are tons of recipes with canned tomatoes in them, so I can see my month floating away on a stream of tomato sauce icon_biggrin.gif

    Oh, my sweet Paula - you are absolutely correct! Yes! Tomato sauces (any), tomato paste, tomato juice, tomatoes stewed, tomato puree, etc, etc, etc...are wonderful choices! tomato.gif

    Cooked or uncooked the tomato.gif is the doll of the month! The lycopene is better when they are cooked, so please cook away!
