Hi menu friends!!!! It's a gorgeous day in Southern California!!! Wish I was home instead of stuck in a windowless cubicle at work!!
I made everything last week!! A rare occurrence!
I'm still working on emptying my freezer and pantry and it's going well! But my list is still long!!
Here's my menu - share yours!!
Saturday - Pernil (Puerto Rican Pork Shoulder) (from freezer) with Elote (Mexican Corn on the Cob), and Brussels Sprout chips (from another source)
Sunday - Sriracha Mayonnaise, various grilled sausages (from freezer), Black Bean-Tomato Soup With Cilantro-Lime Cream. Kimchi Pasta (from another source)
Monday - Bacon With Sriracha and Brown Sugar, Eggs and Chiles Ole! (using chiles from freezer)
Tuesday - Best Beef Barley Soup (using leftover beef from freezer and barley from pantry)
Wednesday - Ham Calzones (using leftover ham from freezer), salad
Thursday - Asian Burritos With Ginger Salsa (using leftover Asian ground beef from freezer, Gyozas (from freezer), Jilldo's Peanut Butter Truffle Cookies and Charmie's Snickerdoodles for work on Friday
Friday - leftovers

Another week went by way too fast! Did pretty good last week. This week I'll be working about 50 hours, so I will be very busy; but luckily, some of it can be done from home. A crazy week it will be.

Lady #2: Chicken, Cashews, Red Pepper and Scallion Stir Fry; mixed greens with an Asian dressing (new recipe)
Me: Ravioli with cheese and spinach, topped with a brown butter pine nut sauce (new recipe); classic caesar salad

Garlic shrimp baked in white wine and herbs served on crostini; potato leek soup from Sun

Lady #1 and #2: They are going to a pot luck, so I am taking them "Honey/Maple Mustard Sausage Bites" and "Marinated Herb Cream Cheese" (both new recipes) with home made black pepper crackers (also a new recipe)
Me: Mexican meatloaf stuffed pepper rings (new recipe); corn on the cob; Mexican salad with avocado and a lime vinaigrette

Lady #3: Chicken and dumplings (my own recipe); baby greens and grilled peach salad with a white balsamic dressing; lavender short bread cookies
Me: Either Chardonnay Spinach Turkey Burgers or Sarasota's Favorite Hawaiian Turkey Burger); sweet potato fries

FRI ...
Lady #1 and #2: Their card/game night TBD
Me: OUT somewhere ... Sushi is my preference

Breakfast: Yogurt, cottage cheese or fruit
Lunch: Leftovers or soup if anything
And ... don't forget to clean out your pantry and freezer, there is a meal waiting to be made!

Nice Menu C - and congrats on getting everything completed last week. I'm still doing a lot of pantry cleaning too. I spent $100 yesterday restocking. I still have some odd items I don't use often, but I had to restock some basics, evoo, balsamic, honey, coffee, some pasta, etc. It adds up quick. But I have been doing lots of cleaning out the freezer and pantry rather than buying a lot. And continuing to make soup every week, which really helps out during the week. And then I can freeze some for nights when I don't have time, or just want something quick. I love having a few containers in the freezer.

Hi, I did well with making things last week, too. I need to get out to the store immediately because they are predicting snow so it may become a mob scene! Sadly, we have used the last of the venison a hunter friend gave us. It was definitely the best venison we've ever had -- I don't know if it was a particulary good animal who only ate the finest landscaping, or skilfully taken, or well prepared, or what, but it was excellent. But there are a few other things in the freezer that need to be used. I guess it's the chilly weather we're expecting, but this week has a lot of warming meals.
Sat – Pumpkin Posole (although I think I will not use the pumpkin and use a mole sauce instead) with tortillas
Sun – Black-Eyed Peas With Mustard Greens and Rice - never too late for new year's!
Mon – Saag Chicken over millet
Tue – Grilled Salmon With Lime Butter Sauce (might just broil) with broccoli or other veg and grits
Wed – leftovers from Sat
Thu – Wild Mushroom Stroganoff, but I will actually add some beef from the freezer. Over egg noodles.
Fri – leftover noodles with clams or anything else to be used up
The cats will be having chow - maybe with salad: I dropped a piece of lettuce while making salad yesterday and Marcel (cat) ate it right up! I guess it's not that different from when they eat grass outside.

My cats, 2 or the 3 love cooked spinach. Maybe it reminds them of when they puke up too much grass that they ate  But they seriously do like it. Strange critters!!

MMMM Hawaiian turkey burger....love it!
When making a turkey burger, do you season them more than you would a beef burger? Do you add more moisture?

I've decided to join in on the freezer cleaning this week! It definitely needs to be done. We have a ton of food in the freezer and pantry, and the checkbook could use a rest. So, here's our menu this week. . .
Sunday: Tacos, refried beans, homecanned pineapple
Monday: Parmesan chicken, mashed potatoes, frozen sweet corn from the summer
Tuesday: BBQ pork sandwiches,
Wednesday: leftover night!
Thursday: I think we'll give Steak Sandwiches - Pioneer Woman a try. Not sure how it will be received with the boys, but we'll try to sell it!
Friday and Saturday: It'll just be me and our 2 youngest boys, so easy dinners they enjoy. Maybe homemade pizzas, maybe breakfast, maybe a picnic dinner in the livingroom - it'll be fun!
